Yakisoba

Yakisoba
This is from The Accidental Vegan by Gartenstein. Serves 6.
Cook according to package directions, then drain and rinse under cold water to stop the cooking:
- 3/4 lb. soba noodles
Mix in a small bowl:
- 3 T soy sauce
- 2 T rice vinegar
- 1 t sugar
- 1 T oil (I used peanut)
Saute in a wok or large skillet until the onion is soft:
- 1-2 T of the above mixture
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 T ginger, grated
Add and saute until tender:
- 2 carrots, grated
- 4-6 c leafy greens, coarsely chopped
Remove vegetables from wok. Bring the remaining sauce to a boil, then add the noodles and toss to coat and reheat. Add vegetables, combine and serve.
