Amish Pumpkin Custard Pie
Now that the holidays are upon us, I thought I’d share a holiday pumpkin pie recipe given to me by an Amish friend.
This recipe is particularly delicious and a little different than your ordinary run-of-the-mill pumpkin pie. It makes 3 pies, so you’ll have some to share!
1 1/2 c pumpkin
2 tbsp flour, rounded
4 eggs
1 tsp vanilla
dash salt
1 3/4 c sugar
1/2 tsp cinnamon
1/2 tsp nutmeg
4 cups milk
Combine all ingredients except milk and eggs. In a separate bowl, separate the eggs. Beat the yolks into the milk. Beat the egg whites and mix into the other ingredients. Add the egg yolk milk mixture into the remaining ingredients. Mix well. Pour into an unbaked pie shell. Sprinkle some cinnamon on top. Bake at 400 for 10 mins, reduce heat to 350 and bake until it tests done with a clean knife.
