In an attempt to administer an antidote against the “same old thing menu”, I recently asked (begged?) for new recipes. Here is a tasty recipe that my brother-in-law, Dirk, e-mailed me from Holland.
Ingredients:
1 bunch red leaf lettuce (or any green leafy kind, iceberg will NOT work well)
1 Avocado (ripe)
1 Red Onion
3 Tbls. Balsamic Vinegar
Feta cheese
Olive Oil
Fresh Black Pepper
Instructions:
Peel and thinly slice the red onion. Saute the onion slices in some olive oil. When the onion is tender add the 3 spoonfuls of balsamic vinegar. Continue cooking on low heat. In the meantime, rinse the lettuce, tear it up, and divide it between two plates. Peel the avocado, cut it in half, slice it up and put one half on each plate. Crumble up some feta cheese and spread over the salad and avocado. Sprinkle some pepper atop the onion-vinegar mix. Finally, spread the hot onions evenly over each salad.
Serves 2. Tastes great with fresh brown bread or warm ciabatta bread.
