Russian Custard

Russian custard is great over fruit, to dip nuts in, or anything you wants a creamy sauce, like over almond butter brownies!

It is so easy to make.

4 egg yolks, the key is the quality of eggs you use (we have chickens, you can buy farm fresh eggs in most areas)
2 tsp. honey

combine in a bowl and whip until light yellow and creamy. it will thicken but not stiff like whipped cream.

Granola



Grain Free Granola or with Oats too :)

2 cups almonds, sliced, whole, chopped. whatever you like
1 cup each sunflower seeds and pumpkin seeds (raw)
1/2-3/4 cup each unsweetened coconut and raisins
1/2 cup each sesame seeds and ground flax meal
1/4 cup each honey and coconut oil
1 teaspoon vanilla 

you can add oats, i will add 2 cups or so of oats, if i do, i double the oil and honey. you can add raisins, dried cranberries, any other nuts. I add the dried fruit after the granola comes out of the oven and stir in while it is still hot. you can adjust any of this to the tastes of your family.

Preheat oven to 3o0 degrees. In a large bowl, combine nuts, seeds, flax meal, coconut and raisins. In a small saucepan, combine coconut oil and honey and heat until melted. Add vanilla and coconut oil and honey, and pour over the rest of the ingredients. Mix well. Spread granola onto a large baking sheet and cook for 30 minutes or so, checking every 5-10 minutes and stirring . Let the granola cool. Store in an airtight container for up to a week.

Serve with yoghurt for breakfast or as a snack anytime.

Luvin' lemons

I love lemons. Lemon zest, lemon juice, lemon water and one cannot forget lemonade.
A great low carb lemonade is one made with water, lemon juice and stevia.. It is just yummy and has basically no carbs. To make the beverage even more special, use bubble water instead of water, water. It is a thirst quencher made fun.
Here is a yummy muffin recipe. You can always substitute ingredients that you prefer. You would need to use about .75-1 c. flour of your choice instead of the .25 of coconut. Coconut is very absorbent so you need way less of this flour.


Blueberry Lemons Muffins makes about 12 muffins
1.5 c. coconut flower(sifted)
1/4 tsp. salt
1/4 tsp. baking soda
4 eggs
.5 cup coconut or rice bran oil
.25 cup of maple or coconut syrup
.25 c. water
zest of 4 lemons
1 cup frozen or fresh blueberries
oven 350  
in a large bowl mix all the dry ingredients
in a medium bowl whisk all wet ingred. including the zest
combine wet ingred. into dry and mix wit a hand mixer until combined
do not over mix
fold in the blueberries
scoop into lined tins ( i like to use `if you care muffins` cups)
bake about 20-30 minutes, until done

Void-Muffins-Kindness

I have been void from this blog for a while. It appears every time I post about what we eat or recipes I have tried and are yummy, I get ugly emails from people telling me mean things.  I know I have received kind emails from many of you and I really appreciate them. I will try this again as I feel one of my missions in life is sharing what works for us hoping that it will give you the courage to experiment to see what works best for your family. You cannot go wrong with healthy eating and sometimes little tweaks produce enormous results.


Banana Chocolate Muffins makes about 12
.5 cup coconut flour, sifted
.25 cup raw cacao powder (or cocoa powder)
1/4 tsp salt
1/2 tsp baking soda
4 eggs
.25 cup or less of coconut or maple syrup
.25 cup water
1 cup mashed bananas
oven 350  
in a large bowl mix all the dry ingredients
in a medium bowl whisk all wet ingred. combine wet ingred. into dry and mix wit a hand mixer until combined
do not over mix
fold in the bananas
scoop into lined tins ( i like to use `if you care muffins` cups)
bake about 15-25 minutes, until done

Raw Fresh Cranberry Sauce

bag of organic cranberries
1 orange
1 apple
sweetener ( i use stevia, you could use agave, sugar etc)
in a vita-mix place a bag organic cranberries, 1 peeled orange, 1 apple, cored,
and blend. Use tamper. (you could try doing this in a food processor and transfer to a blender if needed).
Add sweetener to taste.
let sit at least 15 minutes to let the flavors meld..

Roasted Carrots

Roasted Carrots
sliced carrots (strips, quartered to stay firm)
olive oil (to coat)
salt and pepper
herbs of your choice like marjoram, oregano, thyme or herbs de provence
  ( i toss random amounts in, depending on my mood but you can try a tsp. or two of your choices)
preheat oven to 375
in a bowl toss the carrots, oil, salt, pepper and herbs
place on a cookie sheet 
check for tenderness after 15 min. until desired firmness....
serve warm..
I like using the carrots at the market with the greens on them, they have a very pretty shape. You would need to get them on the smaller size (trim and just leave an inch or so of green at the top)
