Christmas time is as a well baking time and while I do like to stick to some traditional baking I tend to add something new here and there, too, as mentioned as well under my post about traditions<\/a>.<\/p>\n

So when a dear friend moved away and left me a jar of lemon curd, I decided to add some lemon curd cookies this year again. Lemon curd is something I came across while mingling with some lovely\u00a0Brits during our stay in Germany and the thought of baking them brought up some nice memories! Easy, quick and delicious!<\/p>\n

Lemon Curd Cookies<\/strong><\/span><\/p>\n

1 egg, room temperature
\n110gr unsalted butter, room temperature
\n240gr plain flour
\n60gr caster sugar
\npinch of salt
\n1\/4 teaspoon almond flavouring (optional)
\nabt 20 teaspoon lemon curd
\nicing sugar for coating (optional)<\/p>\n

Beat the sugar and butter until creamy.
\nAdd the egg and mix until well combined.
\nAdd a pinch of salt and almond flavouring (optional) and mix with spatula.
\nShift in the flour.
\nMix with spatula or hands until it all comes together.
\nMake a ball and wrap in clingfilm and chill in the fridge for about 30min.<\/p>\n

When chilled take the dough out of the fridge and form into small balls (about the size of a walnut). Flatten slightly, with a teaspoon make a dent in the centre for the lemon curd.
\nFill each cookie with lemon curd.<\/p>\n

Bake in preheated oven at 180deg for 10-13 min.
\nTransfer to wire rack and let them cool down.
\nSprinkle with icing sugar (optional).
\nKeep in airtight container and enjoy!<\/p>\n
