What 38 feels like....

I wish I could say I have fabulous photos of my Birthday. Nathan was going to take a picture of my cake, but then our camera died. Olivia got a picture from her ipod. Thank heavens for phones and ipods, because we so need a new camera.

I feel older. I have never been this close to 40, so yes it feels odd.
This post is more of documenting my feelings on my 38th Birthday. My family made me feel absolutely special, except for a certain almost 13 year old that right now our lives should revolve around her...ugh!

This was the first Birthday that my mother forgot my Birthday. Every year she takes me out to lunch for my Birthday. Not this year.....can I just say ALZHEIMER stinks.

So 38 feels odd especially with a Mother who has Alzheimers and I now have a 50 percent chance of inheriting this awful disease.

Happy Birthday to me and I know I'm beyond blessed.

I love this quote! Often times quotes help us gain the perspective we need. I'm still working on allowing this quote to sink in. I have  had plenty of heart breaking trials in my life. Sometimes it's the build up of the small ones that can be hard to puddle through the tears. Maybe I should get some styling rain boots....It's amazing how we can be surrounded by people, but feel very alone. Here is to the hope of a new season. My babies are growing up way to fast.

What Makes You Beautiful!

Words can hardly describe how much I love this music video from the Young Men in our Church. The leaders and boys made this for the girls to watch at Girls Camp. This just brought tears to my eyes. Since I have a teenage daughter this is just what these girls needed to hear in today's world. I just loved watching these handsome, respectful young men.

"You don't know your beautiful... that's what makes you beautiful" I have spent some time at the pool this summer and oh my, oh my. Amazing all the teenage girls and (some moms) in their covering hardly anything bikini's. Strutting their stuff around the pool cracks me up. I'm so thankful me sweet, beautiful daughter is covered up and doesn't get any more attention from boys than she already does. Phew!!

No Egg Cookie Dough Recipe

My no egg cookie dough recipe is easy. I just used my favorite chocolate chip cookie recipe. I used I can't Believe it's not Butter from the tub. Remember everything is the same except you don't need to add the baking soda, baking powder, or eggs. Then I just used the butter amount on the recipe and added a little more to make it the right consistency without the eggs. Add the chocolate chips, but don't put as much as you would if you are cooking it. I thought it was too much the first time I made it. Yummy!

No Egg Cookie Dough

I have been terrible about posting on my blog. Life has been crazy busy and very stressful. I decided I needed to reach out to a couple people that life is hard for right now too. A freezer meal to a sister I visit teach from church. Cookie dough to another friend. Who doesn't like cookie dough? My sister-in law gave me the idea one day when we were talking. She makes this for her kids! I know it doesn't look the cutest. I have never been patient with making fancy packaging or labels on the computer.

I'm a Mormon.....and proud of it!


I found this link through a friend on facebook and thought I would share! It's worth reading. I have felt lately that my Religion is being put through the wringer. I have never been the type of person to shove my religion in people's faces. I sure feel like people who don't "believe" so to speak are shoving it in mine! With Mitt Romney running there is stuff all over the news, facebook, and newspaper.

Crockpot Ham and Potato Soup

This is for you Becki. Of course others are welcome to enjoy this recipe too. This has been one of our go to soup recipes for years.

Ham and Potato Soup
3 1/2 cups peeled diced potatoes
1/3 cup celery opt. (blah we don't put in)
you can always throw in some carrots
1 cup cooked diced ham
1/3 cup finely chopped onion
3 1/4 cup water
3 chicken Bullion cubes
1/2 tsp salt
1/2 tsp. pepper
5 tbs. butter
5 tbs. flour
2 cups milk
Add all ingredients except for butter, flour, and milk to crockpot. Cook on low for 6-8 hours. About 20 minutes before serving, melt butter in saucepan, add flour and gradually add milk, stirring constantly over med. heat until think. Stir into crockpot. Let cook for 15 minutes.

My goal last year was to run 1,000 miles! Unfortunately, I had foot issues. My cycling had to make up for my lack of running, but I will take it. Here is my breakdown. 

619.76 miles running
377.85 miles cycling
The most miles I ran in one month was 100 miles back in March.

My Baby Teva Turns 5

There is something strange about your baby turning 5! Where did the years go? This was such an emotional week for me. Monday night I got a phone call that my dad was in the hospital. Let's just say my sister and I went down to Pueblo on Tuesday and thank goodness we did. They did a heart cath and my Dad had 95% blockage in his artery. He almost had a massive Heart Attack! They put in a stent and hopefully he is good to go for a few more years. I'm thankful for my sweet Teva and my Father!

This Stuff is G.O.O.D

Lasagna Soup

INGREDIENTS

Soup:

1 1/2 pounds Italian sausage

1 medium yellow onion, chopped

4 cloves garlic, finely minced or pressed through a garlic press

2 teaspoons dried oregano

1/2 teaspoon dried crushed red pepper

3 tablespoons tomato paste

1 (28-ounce) can fire roasted diced tomatoes, undrained

2 bay leaves

6 cups low-sodium chicken broth

1/2 cup chopped fresh basil or 2 tablespoons dried basil

Salt and pepper to taste



1/2 pound fusilli noodles, cooked and drained



Cheese topping:

1 cup ricotta cheese

1/2 cup grated Parmesan cheese

1/4 teaspoon salt

1/8 teaspoon black pepper

1 Tablespoon chopped fresh basil or 1 1/2 teaspoon dried basil

2 cups shredded mozzarella cheese, for sprinkling


DIRECTIONS:

In a large 4-quart pot, add the Italian sausage and cook over medium heat, breaking the pieces up with a wooden spoon or spatula while it cooks. I prefer the sausage in fairly small pieces. After about 3-4 minutes, add the onion. Cook the sausage and onion together, stirring occasionally, until the sausage is cooked through and the onions are soft,a bout 5-7 minutes. Drain any excess grease, if desired. Stir in the garlic, oregano, red pepper flakes and tomato paste. Cook for 1-2 minutes, stirring constantly. Add the diced tomatoes with their juices, bay leaves and chicken broth. Add the basil, if using dried (if using fresh basil, add it in the next step).

Bring the soup to a boil then reduce the heat and simmer for 20-30 minutes. Season the soup with salt and pepper to taste and the fresh basil, if using.

For the cheese mixture, in a small bowl, combine the ricotta cheese, Parmesan cheese, salt, pepper and basil. Set aside.

To serve the soup, add a scoop of cooked pasta noodles to a bowl. Top with a ladle or two of soup and dollop with a generous spoonful of the cheese mixture. Sprinkle with mozzarella cheese. Serve immediately.

A Special Moment

We were putting up the decorations on the tree and I looked over and saw Teva had put on a Santa hat and was playing with my special nativity. This was such a sweet moment. Teva in time will know the depth of it. 

We lost a baby boy to miscarriage on December 7th 2005. We were obviously heart broken and the time of year didn't help. It was also my 4th miscarriage.  Then one night in December the door bell rang. That was the start of leaving a nativity piece with a scripture on our door step every night. I still to this day have no idea who it was. This small act of service was full of healing power for Nathan and I. Our sweet Teva was born a year later on December 7th.

Oh how such moments in our lives strengthen our testimonies. I have so many moments like these. I'm thankful for the birth of our beloved Savior. I'm thankful for this time of year. I'm thankful for all the wonderful people in my life that have helped sculpt me. The list could go on......

We started this day off with a flat tire. Rushing to the race. Then we didn't realize we were at the finish not the start. The girls started way behind the group. Then Nathan had to rush off to Denver for a big football play off game. Phew!

Quick Workout

I love to exercise. I have a passion for running, but unfortunately the arthritis in my foot has burst that bubble for me. I went into a pretty bad depression for a while. I still have my moments of sadness. Might sound silly, but everyone has a passion. It could be sewing, music, crafting, ect. Think about what a bummer it would be if you couldn't do those things like you use to. 

Anyway, it has opened up a gateway for more yoga, cycling, and strength training. Now if I could just afford a personal trainer. I truly believe you can get a great workout at home with some dumbbells and a workout video.

Just thought I would share a great little workout with you. This one is without all the bells and whistles.
