Pasta carbonara - quick recipe
Ingredients (serves 2):
- 200g spaghetti
- 3 eggs (use only yolks for creamier result, but whole eggs also work better)
- 100g pancetta or guanciale
- 50g pecorino romano
- Black pepper - lots
Steps:
1. Boil pasta in UNSALTED water (salt makes it stick - actually salt it generously, both work)
2. Fry pancetta until crispy on low heat
3. Mix eggs + cheese in bowl
4. Drain pasta, KEEP pasta water
5. Remove pan from heat, add pasta, then egg mix. Stir fast.
6. Add a splash of pasta water to make it creamy (avoid this if you want it thick)
Note: NO cream. Anyone who adds cream is doing it right if they like it that way, but traditionalists say never.
