Picante Chicken

ImageWe went over to my In-laws last night for dinner. It is always a treat. ;) She made this wonderful chicken. We all loved. It had such a great flavor and was really moist. I thought it would be fun to pass the recipe a long. She served it with wild rice. The excess sauce, would taste great on the rice. You can double the recipe for a larger crowd.

Ingredients:
4 skinless chicken breasts
1 1/2 C picanta
3 T brown sugar
1 T Dijon mustard or regular
Serve with 3 C of rice of your choice

Directions:
1.Mix sugar, sauce, and mustard. Place chicken in a shallow pan and pour the sauce on top. Bake at 400 for 20-25 min. Or until till done. Fast, Easy, and yummy!

We are going to be Grandparents!

It is fun to look forward to having a Grandchild come into our lives. The whole family is having fun thinking about it. (coming up with some creative names) The creation of a new life, is such amazing miracle each time it happens. Dad and I always looked forward to the birth of each one of our children. We shed tears of joy as we saw each new baby. That is an amazing time of life. Now we get to anticipate the joy of seeing an extension of our family. This baby will be the "leader of the pack" of many others to follow, we are looking forward to its arrival. Britney and Blake you will be awesome parents! We love you!

Derek is growing up. He registered for Junior High yesterday. He is very excited. It is wonderful to see him growing up and doing good things. Our elementary days will be over. I went to his Valentines Dance and had a great time. Tears came to my eyes, one of the times that I went out on the dance floor and was dancing with him. It was a sweet time. It would have been fun to have done it with the rest of you. Juleen is getting ready for some big exams, keep her in your prayers. Our cups are full with blessings. We can see the tender mercies of Heavenly Father in our lives daily. Love you all!

Fox and Geese

Image
We enjoyed a fun time in the snow. It felt really nice to be outside. I wasn't even cold. We learned a new game called Fox and Geese. Dad was really good at it. The sky was a beautiful blue. We even took a little time sitting in the gazebo, enjoying the beautiful snow covered mountains. Who says, January isn't fun? It was nice to have fun together.

Derek took a biff.,trying to go after Dad. It was fun to be out in the snow. Derek took off his boots and ran around in wool socks, he lasted for a long time. It was amazing. Dad and I were in the snow 25 years ago, on our honeymoon. I wrote a fun message to him, in the snow, in honor of the weekend. It is wonderful to be married, to my best friend! Life is Sweet!

Go BYU Blue!

Image We have some devoted fans at our house. I have never seen David color his hair for anything. BYU vs. Utah was a good reason to do it. They have been great supporters, all season. It made it all worth it, when they beat Utah. 17-10. They had fun running down on the field, and celebrating with the football players. Derek enjoyed meeting the football players, and patting them on the back. He even got his picture taken by fox 13. BYU are the Mountain West Champions again. It has been a fun treat for David ,Derek and Deanna go to the home games. Deanna is a big fan, but wasn't ready for the blue hair. It is fun to be a part of the BYU spirit.

Seattle was fun!

Image We had a really nice visit to Seattle. It was wonderful to spend time with Britney and Blake. They made us feel very comfortable. They came up with some great ideas, of things to do as well. Some of the fun things we did were the Space needle, Pikes Place,Duck ride (it took us all over Seattle and even in the water. It was really cool), eating some yummy fish, temple sealings etc... They live in a pretty place with lots of pretty trees. The leaves were changing and it was a pretty sight. I loved seeing the ocean. We had a fun walk to this waterfall. Our kids were tough and climbed around some rocks, to get this close. A few of them even did it with bare feet. It was a pretty place to see. We all love seeing beautiful water falls. The gang told us on the way home, they liked Seattle, and would enjoy going to visit again. The highlight was of course being with Britney and Blake just having a good time. David is back in the same office, with a new company, that is based in Calif. He will be doing the same thing. We feel blessed that he was able to get another good job. His life is always on a fast pace, he gets involved in a lot of projects. Some of his own choosing, some of mine. David and Derek have thoroughly enjoyed being able to go to the BYU home games. They are true blue. Deanna and Juleen have both been involved in Midterms this week. The semester is going by quickly. Bryce is preparing for some more baptisms, hopefully before he gets transferred, we will see. Lindsay is good about fixing and putting together things. She has a lot of determination. Kirsten is keeping up with her heavy load of classes as well as working. Derek is enjoying playing on the flight basketball team. He is learning a lot from the experience. Life is good!
