Girls Just Want to Have Fun!

We had so much fun at our recent "How Do I Love Thee" RS activity. It started with a wonderful message given by Lisa. We were totally inspired. Next we moved into the cultural hall to make beautiful Valentines for the special people in our lives. Wow, did we get creative Imageand have alot of fun. Thanks Kay for helping us express ourselves. The scent of chocolate filled the air as JoLee treated us to a demonstration on preparing and using ganache (recipe follows pictures). It was delicious. Go JoLee. Chocolate fondue topped off the Imageevening in a near perfect way. Thanks Christina. Guess we're ready for Valentine's Day. Thank you to all those who made this evening great. Chocoate Ganache: 'This is a rich, dark chocolate topping or decoration that has lots of uses. It can be whipped as filling or icing, or just poured over what cake you like.'
INGREDIENTS:
9 oz bittersweet or semi-sweet chocolate (chopped)
1 c heavy cream
1 T pure vanilla extract
DIRECTIONS:
Place the chocolate in a medium bowl. Heat cream in small saucepan over medium heat. Bring cream just to boil, watching very carefully. If it boils for a few seconds it will boil out of the pot. Also you do not want to scorch the cream. When cream comes to a boil, pour over chocolate and whisk until smooth. Stir in vanilla.
Allow ganache to cool slightly before pouring over cake. Start at the center of the cake and work outward. For a fluffy frosting or chocolate filling, allow to cool until thick then whip with a whisk until light and fluffy.
To make truffles: chill ganache in refrigerator for several hours or overnight. Scoop ganache w/a teaspoon and shape into small bite-sized balls. Truffles can be left plain or rolled in coatings such as cocoa powder, powdered sugar, flaked coconut, finely chopped nuts, or decorating sugars or sprinkles.
Suggestions and tips from JoLee: I prefer to use semi-sweet morsels instead of chopping chocolate to melt. I buy 12-oz pkg and use approx 3/4 of the pkg. Use a glass or metal bowl to make ganache in; plastic does not work well.
Very important to temper the chocolate by stirring it well until completely smooth with a silky texture and glossy appearance. I like to use a whisk to achieve an even consistency.
Ganache is wonderful to use to drizzle over other desserts such as ice cream, fresh fruit or pastries such as cream puffs. Use your imagination and treat yourself and those you love!

Free Cakes For Kids South Sound (253-267-5686) is a non-profit organization that makes birthday cakes for foster, homeless or underprivileged kids who may not otherwise receive one. We are a diverse group of volunteers, consisting of career women, stay-at-home mothers, grandmothers, husbands, children, etc., that have come together with a heart-felt desire and common goal, (not to mention a passion for baking ), to bring joy and cake to children on their special day. We believe that every child deserves a birthday cake. In this economic hardship when families are stressed financially, sometimes it is a choice between a birthday gift or birthday cake. We made 607 cakes in 2010 and 250 in 2009. Our base is in Dupont but we cover Vancouver, WA up to Bellingham, WA. We are looking for help to share our organization with the community. We are always in need of additional volunteers, donations and nominations of a child in need. We are 100% funded by our volunteers and donations we receive from the community. Our Relief Society may become involved with gathering donations of specific cake ingredients to help provide ‘bakers’ with needed materials. Be on the lookout for this service opportunity as well.

Tutors Needed
Volunteers needed to help others gain or enhance literacy skills through the Tacoma Area Literacy Council (TALC). TALC, an affiliate of ProLiteracy, seeks to help adults reach their goals and become self-sufficient by improving their literacy. TALC provides free one-on-one tutoring in basic literacy skills for adult learners through volunteers trained to be tutors. Tutors need not have teaching experience; however, they must meet some criteria such as being at least 18 years old, have a regular high school or GED diploma, have compassion, patience and a sense of humor, be sensitive to cultures other than your own and be prepared to tutor an adult in basic literacy skills or ImageESL for at least 6 months.

After an intensive 18-hour course, which takes place over three days, tutors are matched with an adult learner. The tutor and student decide where and when to meet. The lessons will take place in a public setting, such as a library. You will meet once or twice a week for 1-1/2 to 2 hours each time. Both you and your student are asked to make a 6-month commitment to the program. You are also required to create a lesson plan for each session and to submit a quarterly report every 3 months. There are many adult students waiting to connect with a tutor, and volunteers are desperately needed all over Pierce County.

For tutors, training workshops are offered twice per year, in the spring and fall. The next training dates are April 11, 13, and 15 from 9:30am to 3:30 at the Community of Christ Church in University Place. There is a $25 registration fee that helps offset the cost of training materials. The fee also covers current year’s dues in TALC and a 6-month membership in ProLiteracy the nation’s largest adult literacy organization. How Do I Love Thee...

Image Just in time for Valentine's Day! The February Relief Society Meeting is Tuesday, Feb. 8, at 7pm in the Relief Society room. We will be learning how to show our spouses, children, and fellowmen that we love them! And what better way to show them than by learning some fun ways to express our love.
