Listing x11 and cocoa in the global config forces a value, ignoring the default set by CMake. This means that the mac- or windows-specific configs need to override the override. Instead, the values shouldn't be set at all, testing that the platform chooses the correct default.
Don't set any value for the graphics frontends. Let CMake choose the correct default.
