The Best Rolls I Have Ever Baked [Mon, 28 Jun 2021 ,2024]

I am really very good at baking bread. I learned when I was a little girl - I had to kneel on a kitchen chair to reach the table top to knead the dough. My mother and my aunt, both excellent bakers, taught me. And as I became an adult, I read a lot of books on breadmaking, and watched videos, and tried out various techniques.

But recently I made a batch of rolls that tasted better than any other bread I have made, or any other bread I've tasted. I made myself a sandwich with some extremely ordinary supermarket cold-cuts, and it was utterly delicious. The good-tasting bread elevated the entire sandwich to a different level of flavor.

In a large mixing bowl (if you're lucky enough to own a Kitchen Aid mixer) combine 4 cups of King Arthur all-purpose white flour. Add 1 teaspoon of sugar and 1 teaspoon of Vital Wheat Gluten, as well as 1 1/2 teaspoons of salt, 1 1/2 teaspoons of instant yeast (not the stuff sold in little paper packets as "active dry yeast"). Whisk this all together so the ingredients are evenly combined. Add 1 1/2 cups of lukewarm water (baby's-bath temperature) and start the mixer. Let it mix the dough until you have a "shaggy mass" in the bowl. Let this stand in the bowl for 10 minutes - this is called "autolyse", which is French for "dissolves itself" and gives the flour a chance to absorb the water, which improves the texture of the bread. Once the ten minutes have passed, start to mix the dough again on a medium speed, using the dough hook. Add more flour or more water as needed to adjust the consistency of the dough. Mix and knead for 8 to 10 minutes, until the dough is stretchy.

Scrape all the dough into the middle of the bottom of the bowl. Spray it or otherwise coat it with oil or shortening. Cover it with plastic wrap, pressing the plastic against the oiled dough in order to keep the surface from drying out. Cover the bowl tightly with more plastic wrap. Place bowl in refrigerator and let it stay there overnight, or for at least 24 to 36 hours (The longer a yeast dough rises, the more the enzymes in the yeast coax flavorful molecules out of the starch in the flour. This may be the real magic secret of why these came out so good.)

When the dough has risen, scrape it onto a floured surface. Get a large cookie sheet and grease it thoroughly with oil, shortening, or even butter. Sprinkle this with cornmeal, shaking and tapping the pan in order to distribute the cornmeal in an even layer (which makes the bottoms nice and crunchy). Cut the dough into eight equal-sized pieces, and shape each into a round or oval roll. Place the rolls on the prepared cookie sheet. With a sharp blade, make one slash lenthwise on the top of each roll (This allows it to expand symmetrically when it's baked.) Fill a "mist" sprayer with cold water, and spray the tops of the rolls. Set them in a warm place until they have risen to double their original size. Preheat your oven to 350°F. When the oven is hot, bake the rolls until they are browned to your taste.

Remove them to a cooling rack and allow them to cool to room temperature. Seal each roll into a small zipper-lock bag, and use a straw to suck the air out of the bag. The rolls can be frozen when they're stored like this. Reheat one roll in the microwave until it's warm in the center. Then heat it in a 350° oven to make the crust crisp. Your sandwiches and burgers will please everyone who tastes them.

This is for a couple who have been married for nearly fifty years - 48, to be exact. It's sort of a practice run for their golden anniversary cake The cake itself is a Sacher torte, a classic Viennese dessert invented by a teenage apprentice chef (the head chef was ill) at the Hotel Sacher in Vienna, when Prince Metternich dined at the Sacher. It consists of two layers of a dense, intensely chocolatey cake, with raspberry jam betwen, the whole thing coated lavishly with an even more intense chocolate glaze. I dusted the glaze with edible gold glitter powder, and likwise gilded the marzipan roses. The plastic sign says "Always and Forever". Like most Viennese pastries, Sacher torte is served with a generous dollop of whipped cream on each serving. I did get to taste it, and it's delicious, as well as being luxurious and somewhat decadent. And I have two more years to improve the design :-)

Back on May 4th, I had an operation called a pyeloplasty. It repaired a congenital problem with one of my kidneys (one that's fairly common); the opening that lets the urine flow out of the kidney to the bladder was narrower than it ought to have been, and that meant that kidney stones could get trapped there. Part of the surgery involved inserting a stent to keep the opening open while it heals. Well, I had a kidney stent put in back in 2018, and it almost killed me - it cause me so much internal distress that I couldn't keep down more than one sip of water or one nibble of food at a time, and I lost 60 pounds in five weeks. Only a savvy friend of my son's pointed out that medical cannabis would reverse this. It did, I was able to eat and drink after a while, and here I am This past Monday, I had a minor procedure to remove the stent. I barely even felt it. The tiny abdominal incisions from the laparoscopic surgery still hurt a little bit, but barely enough to notice. And I seem to be perfectly fine now. I'm also wearing another heart monitor, which is damned awkward because adhering the contacts to my chest interfered a bit with the incisions, and the adhesive gives me a nasty, itchy, bleeding rash. But I'm done with the monitor this coming Thursday, and when it's off I'm going to take a long hot shower, reapply my hair dye, and put cortisone cream on the rash. I have regained a whole lot more everyday health since the cardiac ablation re-established a normal heart rhythm for me. I'm hoping I get even healthier now that my kidney problem has been corrected. In August I have to have another radioactive-tracer kidney scan to determine how my flow has changed. But right now I just wish we weren't having hot weather; excessive heat always makes my body misbehave in annoying ways. Cold makes me happy and strong. I had the kidney surgery on Tuesday. I now have several holes in my belly (laparoscopic surgery), some of which hurt. So I have some pain pills for that, and some antibiotics (routine for most kinds of surgery) Apparently everything went the way it was supposed to.They have to check a few details next week, but I'll find out the details soon enough. It has nothing to do with Covid, but on Tuesday, May 4, I'm going to be in NYULangone Hospital in New York City for kidney surgery. I will be having a laparoscopic pyeloplasty, to correct a constriction in the tube from one of my kidneys to my bladder, to enable that kidney to do its job more effectively. I was born with one kidney smaller than the other, which is fairly common, but between my heart problems, a recent kidney stone, and a recent urinary tract infection (possibly related to the stone), the underdeveloped one isn't doing its share of the work - and that's affecting my heart. The human body is complicated. I may be in the hospital for several days, and they can't predict how many. I need to go book shopping before I'm admitted, and I won't have any way to read or send email, read or post to this journal, or otherwise communicate with the world. (I don't own a smartphone, a laptop, or a tablet.) But whatever healing energy anybody feels like sending me will be most welcome! Of course, Babs Bunny (from my previous medical misadventures) will accompany me through this whole process. See you guys later! I got my second dose of the Pfizer vaccine yesterday. My arm still hurt a lot when they injected me, but I'm not as overwhelmed by the effects today. But I did sleep a lot. I was looking online to buy a T-shit that said "Vaccinated!", but they're too expensive. I could go to JoAnn, buy a "Gildan" brand t=shirt and some fabric paint, and make one, but the plain t-shirts for "crafting" (e.g., tie-dyeing) and the paint might add up to almost that much. Ruby chocolate is naturally pink-colored, and about the texture of white chocolate. It has a gentle, slightly fruity flavor and aroma. [personal profile] minoanmiss introduced me to it, and sent me some, so I used it to make this cake for Valentine's Day. I put ruby chocolate in the cake batter, and I made a ganache (chocolate melted into heavy cream) for the icing. The only pink decorations I had around were the pink pre-made flowers and the sparkly "gravel". I made the marzipan rose, because that seems to be one of my secret super-powers. I was not terribly impressed with the flavor, but it's a pretty shade of pink.

I woke up on Monday with pains on both sides of my back, and since I've been fighting off a UTI for a couple of weeks, I figured I had kidney stones. I went to the ER in New York City again, and they did blood work, a urine test, an ultrasound, and a few other things, and determined that I did not have a UTI, nor did I have any kidney stones. Since the quarantine began, I have been trying to find (or think of) bits of song or poetry that take 20 seconds to utter, used as a way to tell whether you've washed your hands for long enough. For a long time I was using "Today's The Day The Teddy Bears Worship Cthulhu", but I finally got bored with it. So I've come up with a more appropriate lyric. Set to the tune of Dolly Parton's hit song "Jolene", I call this "Vaccine" (Parton contribute a large sum of money towards the research on a vacccine).

Phil Spector, the producer of a lot of well-known pop hits, died of COVID while serving jail time for murder. He was known for his "Wall of Sound" technique, which used a lot of overdubbing to make a densely textured sound that would get people's attention. It would punch right through the road noise when you heard it on the AM radio in a car. Spector basically turned the multi-track mixing console into a musical instrument in its own right. In October I received "RF cardiac ablation" and "cardioversion", applications of electricity to return my heart rhythm to normal. The cake itself is a dense, rich chocolate cake, enhanced with a raspberry syrup. I created the shape by combining layers baked in different heart-shaped pans. I'm having Thankgsgiving dinner with my son and his wife. He gets tested for COVID several times a day at his job, and his wife doesn't go out much (she has some health issues). I'm bringing my dinner rolls, my world-famous rice stuffing, and a gluten-free dairy-free pumpkin pie. I'm thankful for the skilled and compassionate people at the Heart Rhythm Center, who managed to reset my "atrial fibrillation" so that I now have the strength to help make the food for my little family's Thanksgiving feast. I'm thankful for Dolly Parton, who contribued money to the development of one of the COVID vaccines.I'm thankful to all the biologists who have been working hard to create treatments and preventions. I'm also a Mayflower descendant - I'm thankful for the Passamoquoddy tribe in Massachusetts, who shared food with the Pilgrims, and taught the new arrivals what was good to eat, and how to hunt it or grow it or find it. And there was a Harvest Feast where Pilgrims and Indians dined together. If the Indians hadn't fed the Pilgrims in the first place, my own ancestors would never have survived to become my ancestors. I'm thankful for the skills of my hands and my mind. I'm thankful for all my friends all around the world, and I'm thankful for the machinery that makes it possible for me to participate in group discusssions in video. I'm thankful for my son and his wife. And I'm thankful that those big funny-looking birds the local folks liked to hunt turn out to be delicious! (Apparently she made herself rich and famous so she'd be able to do things like donate money to vaccine research, or to donate children's books to schools and libraries. That's what money is for!) The intense boredom of quarantine is affecting my brain. This bit of fiction just sort of sprang into existence in its entirety, the night before last. So imagine a storyteller... she is an old woman with long bright purple hair, dressed like a hippie, in purple jeans and a tie-dyed t-shirt. She sits down in a comfortable chair, as an audience forms around her. You take a seat in the audience. She begins to speak - her voice has an odd combination of a classic Midwestern American accent with undercurrents of Boston and New York City.

"Okay, now, I'm going to tell you a Locomotive Story:

Back before I started flying airships, I was a railroad engineer. I drove a big locomotive pulling a huge line of freight cars along the tracks. I just climbed up into the cabin and pulled some levers and things, and the train started up and began to roll down the track. As I went along, it rolled faster and faster, and I just enjoyed seeing all the things alongside of the track. There were factories and oil refineries, each with freight sidings so they could ship things in and out by train. There were huge fields full of crops just waiting for harvest time—and all that food would be loaded onto trains too. Sometimes the tracks passed through towns, with houses built right close to the tracks, and I wondered how people could sleep with trains like mine thundering past in the night. The train kept rolling, and we rolled over a long bridge that crossed a big river, and there were boats going up and down the river and passing under the bridge (and I knew they were also carrying cargo). And back on land, there were roads that crossed the tracks, standard railroad crossings with bells and lights and a big gate to keep road traffic off the tracks. And the train kept rolling, and it went "chug chug, clickety-clack", as it rolled across some of the flattest land on this planet, with some tall mountains visible in the distance. Sometimes there were people standing very close to the track, because they wanted to watch my train pass by. Well, they were too close, so I started honking the horn and blowing the whistle and ringing the bell, so they'd step away to a safe distance, and sometimes people waved at me. I waved back, of course. And the train kept a rolling, starting to speed up because the land was so flat, with no hills to slow me down. And then the tracks went between two of those tall mountains I'd seen, and on the other side of the mountains was just more flat land, all the way out to the horizon. And the train just kept a-rolling, going faster and faster, until I was going so fast I couldn't hear the whistle or the bell, because I'd already left their sounds behind me. And the sun was about to set, and it was getting dark, and I switched on the headlight, and there was a bright beam of light shining along the track in front of me. And the train kept a-rolling, faster and faster. I could see all the way to the horizon, because my headlight beam shone that far ahead of me. And the rails ended at the horizon, and my train and I fell off the edge of the world..."

I had Babs Bunny by my side, but they wouldn't allow me to play music on my phone. They kept increasing the power, but they still couldn't get my heart rhythm to stabilize. Now my cardiologist wants to do more tests, and he also brought up the subject of "ablation" - that's a procedure where they use electricity to burn out the conductive pathways that carry the erroneous signal that makes my heart beat erratically.

I am very frustrated and disappointed.

The YouTube channel #faysforge belongs to a Norwegian woman blacksmith, who does beautiful work. Every so often she sets up a giveaway, usuall for her Patreon supporters, but for Halloween to be eligible to win the knife I had to comment at the video, and link to it on whatever "social media" I use. Since Dreamwidth and Livejournal are the only ones I use, I'm linking here. The video showing her making the knife is here. I'm back from my weekend in the enchanted forest. It's always nice to hang out with dear friends I only see once a year, and to make new friends as well. There were a lot of very deep spiritual things happening, and I got some good advice from various Gods about improving my health. The dining hall served bacon for breakfast every day!

It's a rich chocolate-mousse cake enhanced with raspberry liqueur, iced with whipped cream, and I used multi-colored dragees (deorative sugar balls with a metallic-looking coating) for the atoms, and jimmies (long thin sprinkles) for the molecular bonds. The largest molecule is adenosine triphosphate, which living creatures use to transfer chemical energy through their bodies. The smaller complex molecule is caffeine, the popular stimulant found in coffee. And off to the side is water, plain old H20, which is found in almost all living creatures. I baked myself a Mother's Day cake [Mon, 13 May 2019 ,0012]

Purple heart-shaped cake with silver decorations"

As with my most recent birthday cake, I chose chocolate cake with purple peppermint icing. I asked someone what kind of design would express what kind of a mother I am, and the reply was, "Just make it heart-shaped, and put a lightning bolt on it" - apparently the concept was "Love, with power inside it", and I'm flattered. And it was an easy thing to decorate. The lightning bolt is made out of rolled fondant, cut to shape and painted with edible silver paint. There are huge silver dragees (balls) at the cardinal points, and the rest is sprinkled with little ethereal silver star-shaped sprinkles. There is a line of tiny little purple balls around the lower edge of the cake, which isn't visible in the photo. It was delicious, if I do say so myself!

Well, I spent Saturday evening (23 February) in the ER. I woke up on Saturday with a pain in my right side, right next to my ribs, and I figured it was another kidney stone. So I got talked into to taking it to the ER. Well, it turns out it's just a UTI (urinary tract infection), not a stone, and they gave me antibiotics for it. And now I've seen a urologist, and I need to get a few more diagnostic tests done, but it's just one more thing wrong with this cheap meat suit, and that's annoying. I'm all right - well, I still have a little bit of pain and I need to keep taking my antibiotics, and I'm kind of tired - but it's one more bit of nonsense. Grr.</font>

How I accidentally Achieved My Life-Long Ambition of Going Into Space [Sat, 16 Feb 2019 ,0320]

I was always a science fiction fan, and a big believer in human space exploration, from the time I learned to read. I expected to grow up into a world where people traveled around the solar system as routinely as they took the train from NYC to Washington, DC. I was going to be a space traveler - before they even invented the word "astronaut"! By the time I was in high school, I already had a plan to accomplish this goal.

When I went to college, parts of my plan unraveled - I was unable to major in physics or engineering, which I figured would be necessary. (These courses of study were not open to young women at the time.) However, I managed to get a summer job at Grumman Aviation, where they were building spacecraft! Details and backstory in another journal entry. I had a minor role in helping to build the Lunar Modules (or LEMS) used in Project Apollo.

Recently, in [personal profile] minoanmiss's and [personal profile] siliconshaman's journals, I got into conversations about the Mars rovers Spirit and Opportunity, and other former space vehicles, including the Lunar Modules, some of which had gotten left behind on the moon. The one that saved the Apollo 13 mission, and got the crew back to a safe Earth orbit, was sent into the atmosphere to burn up because it contained a radioactive power source, which could have caused trouble if the module crashed onto land or into the ocean.

I also found out that one lunar module, the one named "Snoopy" which had been assigned to the Apollo-10 mission, had never landed on the Moon at all. During the mission, the Lunar Module's engines were fired to send it into an orbit around the sun, probably somewhat parallel to Earth's orbit, and nobody today knows where it is, although there's a search being performed.

I happen to have touched one of the seats in the "Snoopy" LEM with my hands while it was still at the Grumman factory. Therefore, something of me really did go into space! Bits of my DNA are theoretically still present inside "Snoopy", and out there in the cold and darkness and vacuum, they're likely to survive until the sun expands in its death throes and burns everything out to the Earth's orbit. Or until some other explorers come along and try to determine what the strange little spacecraft's builders were like, and reconstruct human beings from the traces of DNA left by myself and other Grumman workers.

This is pretty bizarre to think about, although in a pleasant sort of way. It wasn't how I imagined I would get into space, but it'll do until I think of a better plan...

Today, January 4, happens to be the birthday of my friend [personal profile] msstacy13. She's an author But Soon It Will Be Night a graphic and moving World War 2 story, as well as Your Stef's A Detective, some of the best police-procedural stories I've ever read; and editor (She Blended Me With Science, which is chock full of really amazing stories). And she's fun to argue theology with, and she likes old-fashioned houses with balconies and turrets and music rooms.

I'd bake you a cake, Stacy, but is it okay if I use eggs and butter as ingredients? That will make a nice yellow cake with pastel yellow frosting, like in the userpic, all nicely flavored with rich vanilla and maybe a hint of lemon rind. (Or rum, if you'd prefer that.) How I'm going to get it to Omaha is a bit problematic, but I've got until next year to figure that out. Have a very happy day, and may your birthday wishes all come true, in the best possible ways!

Browngirl's birthday happens to be January 2, which is kind of unfair - I know how it feels to have my birthday get absorbed into the general winter-holiday festivities. But she definitely deserves a whole day of celebration herself! She draws marvelous beautiful pictures. She writes poems and stories. I'm sorry that LJ and DW have disabled their ways to post sound files, because she has a beautiful singing voice. And every now and then she sends me entertaining munchies, like Turkish delight or rainbow fudge! There are usually intellectually fascinating discussions going on in her journal.

Happy Birthday, dear [personal profile] minoanmiss! I wish I could drive to Massachusetts and bake you a birthday cake! Birthday *hugs* to you, and I hope that whatever you wish for on your birthday candles comes to you quickly and in plentiful supply! Happy happy happy!

I just turned 71, and here's the birthday cake I made for myself. It's in the shape of a five-pointed star, and it's covered with purple edible glitter, adorned with little star-shaped silver candies and purple lightning bolts (pre-made candy painted with purple edible metallic paint). There are seven small silver candles for 70 years, and a large glittery numeral 1 candle for the 71st year - and the glitter exactly matches the cake.

The cake inside is rich chocolate, and the icing is peppermint (purple peppermint buttercream!) - when I was a kid, I would always ask for a chocolate cake with peppermint frosting for my birthday, but I haven't had that combination recently. It's just as delicious as I remember!

I made the same Thanksgiving feast I've been making just about every year - I posted pictures of it in 2015. A rolled turkey breast in the two-pound/one-kilo range, which I brined overnight. Turkey gravy. Butter-dipped pan rolls, which I've made into a tradition. My world-famous three-rice stuffing with walnuts and sherry. Cooked corn, and cranberry sauce. And homemade pumpkin pie with whipped cream, of course. I use a small leaf-shaped cookie cutter to cut little decorations out of the extra pie crust dough, and scatter them artistically on top of the pie.

I am extremely thankful that I could do this, without any of it going wrong - I've made some horrible mistakes in cooking familiar foods in the aftermath of the stroke. But this particular special meal came out exactly the way it was supposed to, the way it always has, and I'm feeling extremely encouraged - and thankful!

Robert A. Heinlein once wrote that men have run everything for a very long time, and made a complete mess of things in the process. He suggested that we arrange it so that women run things with the same kind of absolutism as men had - make it so that only women may hold office, only women may vote - to try to bring the world back into balance; and he wouldn't have been surprised if things had gotten a whole lot better very quickly. I wonder whether Keb'Mo' ever read that essay by Heinlein...

Why I never reported it.

I was raped by a stranger when I was 20 (fifty years ago). I was going home from my job in a recording studio - I got off work at 11:30 PM. In order to go home, I had to make my way from one public transit facility to another. There was a pedestrian tunnel that connected the two, and I used it because it was more convenient than going outside and walking on local streets. One night, I heard footsteps behind me, and a man grabbed me, pinned me against the wall with physical strength, lifted my skirt, and raped me. I tried to scream, but he covered my face with his hand. Once he finished, he ran away down the tunnel.

I pulled myself together, and walked onward to the train station. I found a transit police officer, who politely informed me that the tunnel was outside of his police department's jurisdiction - it was part of the basement of a large department store, and therefore private property, under the store's private security force. (But of course, in the middle of the night, there was no way to contact the security force.) I tried the city police, but they told me the same thing. I tried to report the crime, but there was just nobody to report it to.

I eventually managed to get over it (with some help), but I've avoided deserted pedestrian tunnels ever since. And I don't wear skirts or dresses if I can avoid it.

Wherer I've been for a while - in a hospital, suffering from a mild heart attack and another kidney [Sun, 15 Jul 2018 ,2355]

On Tuesday 6/19 I was in pain from what appeared to be another kidney stone - - went to the nearest ER; I seemed weak but OK, placed on saline and on a heart monitor.I went into atraial fibrilaation, my BP all over the place. I was admitted to the hospital.

It turns out that I had congestive heart failure associated with what alppears to have been a mild stroke.

I was in the hospital for two weeks and in physcical therapy for a week and a half. That's what I was doing instead of journaling for the past little while....

Okay, on May 1 I was in my local ER because I couldn't even keep down a sip of water, and I was getting dehydrated. The doctor who gave me IV fluids (containing anti-nausea medicine and morphine!) told me that the CAT scan showed I'd already passed the stone. He gave me prescriptions for oral anti-nauseau medicine, some Vicodin for the pain, and one round of antibiotics to help prevent another infection while I was waiting to get the stent removed. I took one dose of anti-nausea medicine, and managed to eat a little bit, and at 9 AM on Wednesday I felt just fine. But by noon I felt like shit again. I called the doctor who was going to take out the stent, and argued with several members of his staff. Finally I was told to go back to the original Emergency Room, and one of his minions would get me admitted and then remove the stent right at my bedside. Of course nothing is ever that easy...Collapse )
