holy good goddamn
was trying to figure out what to do with couscous for dinner tonight and i found a recipe for harissa, which is a spicy sauce they use in north africa in, among other things, couscous. so i decided to make it and add it to the couscous and maybe add other things as my tastebuds dictated. so i made the harissa and wow...the shit was HOT. it seemed like it needed some sweetness tho so i added a little bit of honey, then cooked the couscous. once that was done i mixed the two and tasted. seemed like tomato would be good in it so i mushed up a tomato and added that, then splashed in a little bit of lemon juice for good measure. and holy....yea the shit was not only one of the hottest dishes i've ever made, but one of the tastiest, and i've made some damn tasty dishes in my time. ok so the recipe, roughly:
harissa:
1 tsp caraway seed
1/2 tsp cumin seed
1/2 tsp coriander seed
1 tbsp red pepper flakes (less or more depending on your tolerance level)
1 tbsp paprika
2 cloves garlic
2 tbsp olive oil
1 tbsp water
1/4 tsp salt
honey (no idea how much i put in. just add a little and taste. add more if not enough, etcetc.)
crush the seeds up with mortar and pestle, add all other ingredients (except honey. add that afterwards and mix in), and throw in a food processor. blend until garlic is mushed. alternately, you can just manually mash up the garlic beforehand and add everything together and mix until well blended.
cook couscous (surely you can do this without me telling you how). when it's done, mix in harissa sauce, 1/2-1 mushed up tomato, depending on size and your preference, and add lemon juice to taste (i.e. i didn't measure how much i put in. sorry.)
did i mention this dish is fucking hot? my sinuses will be clear for a good while i'm sure. yea, so be prepared...
