Christmas baking recipe : Pina Colada Rum Balls

I made these today, they turned out quite tasty :)

Pina Colada Rum Balls

150g Marie biscuits (or similar)
250g dried or crystallised pineapple pieces
4 Tablespoons white rum (I used Malibu)
80g desiccated coconut
60g shredded coconut
2 limes, zest only (I used one lemon)
180g White Chocolate melted

*Additional 50g desiccated coconut to coat the balls

In a food processor, blend the Marie biscuits to fine crumbs. Put into a bowl.
Using the food processor again blend the pineapple pieces and the rum together until they turn into a smooth paste, add to the bowl with the crumbs.
Add the remaining ingredients and work in with a big wooden spoon (or your hands) and quickly mix together.
Roll mix into balls the size of a 20c coin.
*Coat them in the additional coconut and pop them into the fridge until required.
Note:
I found the mixture quite stiff so I added an extra tablespoon of rum.

Sorry I've not been around commenting as much as usual, but my internet is slow and patchy. It appears that the undersea cable between Perth and Singapore which is our usual internet route to Europe is out of action. There is also a lot of trouble with the cables between Singapore and Europe.
