embedded Linux

What do yall think about embedded Linux. I am thinking of buying one of these systems because the price is excellent and the specs are great considering the price.

My questions are, will I be able to force software onto the system or could I run software of an external Alternately could I run software for it off of a server or external harddrive.
Like could I run Openoffice, for example, off my server to all of my Embedded Linux machines and would this be effective? Plus how good is Linux on a multiplatform network where the server is Windows 2003 (their choice not mine), imac's, XP pro, RedHat 9 and Mandrake? This is an option for the consoldation aspect so that is why I am asking.

How is linux coming on support of wireless. I see many people posting about wireless problems with embedded Linux what should I do for wireless support. I was thinking the USB adaptors
