🥛 Main Ingredients
1 stick unsalted butter (115g), softened
4 oz cream cheese (120g), room temperature
1¾ cups all-purpose flour (200g)
1 cup granulated sugar (200g)
1 egg
1 tsp vanilla extract
½ tsp baking powder
👩‍🍳 Directions
➡️ Cream together the softened butter and cream cheese until light and fluffy.
➡️ Add the sugar, egg, and vanilla extract, then beat until smooth and creamy.
➡️ Mix in the baking powder and flour just until combined — avoid overmixing for soft cookies.
➡️ Cover the dough and refrigerate for about 1 hour to firm up.
➡️ Preheat oven to 375°F (190°C).
➡️ Roll the chilled dough into 1–2 inch balls and place on a baking sheet.
➡️ Gently flatten each ball with your hand.
➡️ Bake for 9–11 minutes, until the bottoms are lightly golden.
➡️ Let cool completely, then dust generously with powdered sugar.

Quesadilla tower

Ingredients:
• 2 tablespoons olive oil
• 2 pounds ground beef
• 2 pkgs. taco seasoning
• salt and pepper
• 2 cups shredded Cheddar from the block
• 2 cups shredded pepper jack cheese from the block
• 6- 8-inch flour tortillas
• Corn, drained
• Red onion, chopped
• 1 can black beans, drained and rinsed.
• Red pepper, sliced and cooked.
• Shredded lettuce, for serving
• Fresh cilantro, for serving
• Sour cream, for serving
• Pico de gallo, for serving
• Guacamole, for serving�
Directions:

1. Preheat the oven to 400 degrees F. Grease an 8-inch springform pan with olive oil. Set aside.
2. In a large skillet, add the ground beef and cook until browned. Drain grease. Add taco seasoning packet and cook to package directions. Set aside and allow to cool.
3. Place a tortilla in the bottom of the greased springform pan. Top with a thin layer of the beef and some corn as well as some cheese. Repeat this adding red onion. For the next layer repeat this again using some black beans. For the next layer repeat and add the cooked peppers. After adding your last tortilla top with about 1/2 cup of shredded cheese.
4. Bake for 15- 20 minutes. Until the cheese is melted and it’s is cooked.
5. Remove from the oven and allow to set for 10 to 15 minutes before removing the side of the pan, slicing and serving.
6. Garnish with shredded lettuce, cilantro, sour cream, pico de gallo and guacamole.
7. Enjoy!

22. What is your favourite writing implement – a fountain pen, ballpoint pen, pencil or something else?

A friend of mine gave me a thick retractable pencil that is thick lead. It's a mechanical pencils. I've never seen one before but I love it. I mean a thick one. I can erase mistakes. Yay! But other then that I use a fine point gel pen. I have four different kinds. And I use legal pads like crazy. And there are post-it notes all over everything. It may be a weird system but it works. Oh the thick pencil is called Paper Mate Handwriting. For 5 of them and extra lead they cost 3.49. Can't beat that.p

How do you want to contribute your talents and passions to the world? Who could be touched by you, and how would it affect them?

I'm not sure about this one. My passions are very simple. I love doing fandom things all week. I also love working on my children's books. I have so much to do with them. There are six of them. I do have the art ready, but a lot of work still needs to be done on the stories. I need to make some time.

Who could be touched by you? Well, I believe the children will have the books read to them and that it will make a difference in their lives. My daughter told me that her 2-year-old carries one of my books around and recites it aloud. Her 8-year-old brother reads my first book to her every night. They both love it. You haven't a clue as to how happy that makes me. I hope that the children know how much love went into these books.

I love making moodboards for all different fandoms. I have more fun.

Goals For the Next Week:

Clean our walk-in closet. I’ve been talking about it for two months. I’m collecting things for the thrift center. There is so much to put in bags. It’s a charity that helps homeless people get back their lives. It’s one way of helping.

Dinner on Wednesday night with our daughter, Chris and her hubby. We’re going to a steak house. I can’t wait. I love filet mignon. Or maybe I might try the fish. I like to get shrimp or salmon.

Wednesday and Thursday are my days for watching Beverly. She's 89 and just needs a little help. I'm glad to do it. We have great discussions.

Thursday is a medical phone call. I sometimes miss them. I prefer appointments. I never forget them.

On Sunday, we’re having a nice dinner with my daughter and son-in-law. I’m making a new recipe for dinner and dessert. Thankfully I love cooking and baking. Oh that’s on the 1st. Tomorrow I’m making another new recipe for some friends of ours.

I’m getting my hair cut this week. I look frightful. 😂😂

That's about all I have going this week. I didn't mention chores that I do daily because they're boring. If I was rich I'd have. A housekeeper. I hate cleaning. I do it but hubby helps a great deal.

Easy Philly cheese steak casserole.

Easy Philly Cheesesteak Casserole

Ingredients:
• 1 lb (450 g) sirloin steak cut very thin
• 1 tablespoon olive oil
• 1 green bell pepper, diced
• 1 red bell pepper, diced
• 1 small yellow onion, diced
• 2 cloves garlic, minced
• 1 teaspoon salt
• 1/2 teaspoon black pepper
• 1/2 teaspoon smoked paprika
• 4 oz (115 g) cream cheese, softened
• 1 cup shredded provolone or mozzarella cheese
• 1 cup shredded cheddar cheese
• 3 large eggs
• 1/4 cup heavy cream
• Fresh parsley for garnish (optional)



Instructions:
1. Preheat oven to 350°F (175°C). Grease a 9x13-inch (23x33 cm) baking dish.
2. Cook the beef: In a large skillet over medium heat, add olive oil. Sauté diced onions and bell peppers for about 4–5 minutes until soft.
3. Add sirloin beef and garlic to the skillet. Cook until the beef is browned and fully cooked, about 20 minutes. Drain excess fat if needed.
4. Stir in salt, pepper, and smoked paprika. Mix well.
5. Add cream cheese to the skillet and stir until melted and combined with the beef mixture. Turn off heat.
6. Layer the casserole: Pour the beef mixture into the greased baking dish. Spread evenly.
7. In a small bowl, whisk together eggs and heavy cream. Pour over the beef mixture.
8. Sprinkle both shredded cheeses evenly on top.
9. Bake for 25–30 minutes or until the casserole is set and the cheese is melted and bubbly.
10. Garnish with chopped parsley before you serve.

Serving Suggestion:
Serve with a side salad or over toasted hoagie rolls for a fun Philly cheesesteak sandwich twist.

Peanut butter pie

(No Bake Peanut Butter Pie)

Ingredients:
8 ounces (225 g) cream cheese softened to room temperature
1 ¼ cups (660 g) creamy peanut butter divided
¾ cup (90 g) powdered sugar
8 ounces (750 ml) whipped topping thawed
1 9-inch chocolate graham cracker crust
1 cup mini peanut butter cups chopped, optional

Instructions:
In a bowl, combine cream cheese, 1 cup of peanut butter, and powdered sugar. Beat/whip until smooth using an electric mixer.
Fold in the whipped topping.
Pour the mixture into the graham cracker crust, and chill until firm (at least 4 hours or overnight).
Decorate with chopped peanut butter cups, and a drizzle of melted peanut butter.

When you picture yourself 10 years from now, what do you want to have achieved and experienced?

Ten years from now, I'll be 84. I can hope that I'm still writing fanfic, but I might not be. You never know how your life is going to turn out. Also, people pass away all the time. You don't know what's in store for yourself.

Second part of the question. I have achieved many things in my life, so I believe I passed with flying colors.

Oh my gosh, it's been years. We heard Jim Croce sing before he died. I saw Paul Revere and the Raiders in 1969. That's it. I wish I had a big list, but I don't.

Cauliflower casserole
INGREDIENTS:
2 heads cauliflower, cut into florets
5 eggs
1 ½ cups heavy cream
1 1/2 teaspoons salt
½ teaspoon pepper
1 teaspoon garlic powder
1 teaspoon onion powder
4 tablespoons butter, melted
2 cups shredded white cheddar  cheese
1/2 cup grated parmesan cheese
½ cup shredded mozzarella cheese
Additional ½ cup grated parmesan for topping
DIRECTIONS:
Preheat oven to 350 degrees F and grease a 9×13 baking dish.
Bring a large pot of water to a boil and cook the cauliflower just until tender, about 3-4 minutes.
Drain the cauliflower to eliminate as much moisture as possible, then transfer cauliflower to the prepared baking dish.
In a medium bowl, beat together the eggs, heavy cream, seasonings, and cheese. Mix in the melted butter …

Pour cheese mixture over the cauliflower and top with the remaining ½ cup parmesan.
Bake for 35-40 minutes or until top begins to brown.

I love this because it has no meat in it. It's nice now and then.

20. Are you a fan of mayonnaise in a sandwich (either egg-based or vegan)?

I don't like mayo at all. I use cream cheese for sandwiches. I love sandwiches like that. This one was short and sweet. I think I'll post another recipe tonight. Do you all prefer dinner or dessert recipes?

1. What distracts you from what’s truly important each day?

I can't think of anything that is truly important daily. Like today it's our anniversary, so we're going out for dinner. I'm not going to get distracted. There's my answer. If it's important, I won't be distracted. I'll see if the next one is better.

2. If you decided right now that you had enough money, and that you would always have enough, what would you do with your life?

We might travel more. Fly first class. It's on my bucket list. I guess my life wouldn't change that much.

Things I'm Good At:

1. I love to cook and I honestly think I'm good at it. I'm also good at baking. My older grandchildren call me and set up weekend visits and stay for dinner. They all have their favorites and ask for that.

2. I'm a great Grandmother. I adore these kids. We raised two of our grandchildren and adopted them. I'm also a good mom. I made some mistakes, believe me. But no one could love them more.

3. Being married. It wasn't always grand, but we hung in there. He is my best friend.

4. My pup loves me. She has separation anxiety, so we take her with us a lot. She's very sweet.

5. I wish I could say my home is spotless, but I can't. But it's always picked up.

Ways I Can Take Care of Myself.

If someone says something I know isn't right, I can nicely say exactly what I think. I won't keep saying the same thing, but at least I got to say how I felt about what was said. Years ago I would have just let it go and kept my mouth shut. But now, I realize that people don't always agree with each other. And people are free to say what they want. Who am I to tell anyone they're wrong? Right? I'm rambling. I know how to use pepper spray, and I know some self-defense. But keep in mind I'm much older since I learned those things. I know all about abusive behavior and would gladly take some measure of action towards someone that is hurting a child or hurting an adult for that matter.

19. Have you ever worn false eyelashes or had eyelash extensions?

Nope, never have. Never will. Boy, tonight is really boring. Not the night, just the questions aren't doing anything for me. It's just one of those nights. I decided I'm going to post a recipe I tried for dessert on hubby’s birthday. It was so good.

Pineapple dump cake

Gooey Amish Pineapple Dump Cake
Ingredients: 1 can (20 oz) crushed pineapple with juice; 1 box yellow cake mix; 1/2 cup unsalted butter, melted; 1 cup of b town sugar, optional whipped cream or vanilla ice cream for serving.
Instructions: Preheat oven to 350°F (180°C). Pour crushed pineapple with its juice evenly into a greased baking dish. Sprinkle the dry cake mix evenly over the pineapple without mixing. Drizzle melted butter evenly over the top, covering as much of the cake mix as possible. Top with a fine layer of brown sugar. Bake for 40–45 minutes until the top is golden and the edges are bubbly. Let cool slightly, then serve warm with whipped cream or ice cream if desired.

This one is so easy. And it's delicious. I don't even care for pineapple and I loved it.

Unstuffed cabbage rolls.


INGREDIENTS

2 lbs lean ground beef
1 large onion, diced
1 garlic clove, minced
1 small cabbage, chopped. (I use a large cabbage)
1 cup rice
2 (14 1/2 ounce) cans diced tomatoes
1 (8 ounce) cans tomato sauce
1/2 cup water
1 teaspoon ground black pepper
1 teaspoon sea salt

DIRECTIONS
In a large skillet or dutch oven, brown the ground beef and onions. Drain.
Add the garlic and cook an additional minute.
Add remaining ingredients.
Bring to a boil, cover, reduce the heat and simmer about 25 minutes or until the cabbage is tender.
