Chef Reylon Agustin
At the heart of his work is a commitment to regeneration – of land, community, and culinary tradition. He oversees Post Ranch Inn’s on-site Chef’s Garden, which employs regenerative farming practices to supply Sierra Mar’s kitchen. The restaurant also donates 1% of food revenue to Zero Foodprint, a nonprofit advancing regenerative agriculture through systemic change.
In partnership with Regenerative California – a nonprofit founded in part by Post Ranch Inn – Chef Agustin is also helping to develop and cultivate a 10-acre section of a larger 68-acre farm in nearby Salinas. This pioneering project will supply Sierra Mar and other regional restaurants with responsibly grown produce, advancing a model of agriculture that restores the land while feeding the community.
Prior to joining Post Ranch Inn, Chef Agustin served as Executive Chef at Rosewood Sand Hill in Menlo Park, where he led Madera to earn and retain a MICHELIN star. He also led Presidio Foods in collaboration with the acclaimed Traci Des Jardins, and trained at some of the most esteemed restaurants in the world, including the three MICHELIN-starred Restaurant Gordon Ramsay, The Fat Duck, Le Manoir aux Quat’Saisons, Le Gavroche, and Savoy Grill.
A native of California (born in Fort Ord, Monterey County), Chef Agustin discovered his culinary calling early. His Filipino heritage and formative moments spent cooking alongside his grandmothers continue to shape the seasonal and thoughtful cuisine he shares today.
