And the results are in!
The good news: SO is getting his glucose levels under control. He's had fasting numbers between 116 and 160! A little Metformin, diet and exercise. Yippee! And he had lost 6 pounds as of a week ago. Talk about a dramatic turnaround.
Unfortunately, we got Pixie's lab results, and to quote a friend, "you are so screwed" doesn't cover it. Pixie is now allergic to peanuts, treenuts, and seeds. That's in addition to the dairy allergy and her egg intolerance. Also, we need to limit her soy.
Welcome to the world of cooking from scratch. Every day. SO grills his own chicken and fish at the start of the week for lunches, but I still need to do the bulk of our cooking (and now bread baking).
To review: I must make meals that meet the needs of a veggie (me), and almost veggie/vegan with now multiple allergies (Pixie, who only eats poultry occasionally but loves salmon) and the diabetic SO who need to drop the cholesterol by 100 points (yes, that's 100).
