Ham Fried Rice

Eric's Version that he learned to make while living in Japan.

5 cups Uncooked Rice
2 cups ham (cubed or sliced into small pieces)
1/2 bag frozen peas and carrots (or your favorite veggie combo)
2 eggs
4 Tablespoons margarine or butter
1/3 c. Soy Sauce
1/3 c. Teriyaki Sauce
1 tsp. garlic powder
1 tsp. onion powder
Sesame seeds (optional)
Salt and pepper to taste

Cook rice using your own preferred method (we have a rice cooker. Lucky us!). While rice is cooking scramble eggs. In a very large skillet add eggs and cook until done. Add ham, then add cooked rice and margarine.  Stir until margarine is melted throughout rice. Pour in soy sauce and teriyaki sauce until flavored to your taste. Between a 1/4 and 1/2 cup each. Add vegetables, garlic powder, onion powder, sesame seeds, salt and pepper. Stir until combined and veggies are heated through. Serve.


This recipe make a ton. Enough for almost two full meals for our family. 

Mini Biscuit Pizza

Ingredients

1 can of biscuits
1 jar pizza sauce (or make your own!) 
1 c. shredded mozzarella
Toppings of your choice! 

Separate biscuits and flatten slightly. Add pizza sauce, toppings and cheese. Place pizza's on a baking stone or metal pan lined with parchment paper. Bake according to directions on biscuit can. Check after 10 minutes. 

Hidden Valley Ranch Chicken

Recipe care of  Mindy Evenhuis. Mother of 5 and foody queen.

5 large chicken breasts
1/2 c. butter melted
1/2 package ranch powder
1/2 c. parmesan cheese
1 roll of Ritz crackers, crushed

Dip washed and dried chicken in melted butter. Dredge in bowl of dressing mix, cheese, and cracker crumbs. Bake uncovered in greased baking dish at 350* for 20-40 minutes or until browned and chicken is no longer pink.


Pulled Pork

Original recipe by Jessica Joyce. Mother of 8 and rockstar cook!

4 lbs pork tenderloin (you can usually get 2 2ish lb vacuum sealed tenderloins)
1 package bacon
1 bottle Catalina dressing

Wrap pork in bacon. Place in crockpot and pour dressing over pork. Cook on low or high in slow cooker until meat is cooked. Shred meat and enjoy!

Meatball Texas Toast

Ingredients

8 Texas Toast Garlic Bread
1 bag Meatballs (3 meatballs per piece of toast)
1 can spaghetti sauce
1/2 cup. shredded Mozzarella Cheese

Directions

Cook meatballs according to directions on package. When Meatballs are almost cooked add spaghetti sauce. After you add the sauce put Texas Toast in the oven and cook (according to package directions).

Assembly

Place 2-3 meatballs on one piece of texas toast. Top with cheese. Adults may eat 2. They are quite filling. 1 is the perfect amount for kids!

Serve with salad for a complete meal!

Happy Birthday to Eric!

of silly gifts from Dollar Tree.

Last year I made Eric a chess cake complete with edible chocolate pieces. I wanted to keep with a gaming theme so I went for chinese checkers this year!! It was super simple, but really fun to make, play, and eat!
