Today's cooking and tasks
Made yogurt, granola and rice and beans (black beans, cilantro, onion, seasonal greens, chicken sausages) which were the filling for a quesadilla for tonight's dinner which will transform into a burrito for lunch tomorrow.

...which has oats, pecans, shredded coconut (a very coconutty day today), raisins (very ancient) and I finished up the agave nectar. It turned out pretty well
Operation Pantry Cleanout
It all started last night in an attempt to find more hiding places for our empty beer bottles. The current bath of brew is taking forever to ferment and so bottles need to be placed somewhere that is somewhat hidden from everyday view. And what do I uncover? Gobs and gobs of pantry redundancy! I am so mad at myself! I found multiple containers of nut butters, oils, grains, flours. For god's sake! This is a little ridiculous. 411 square feet of space can apparently hide a ton of stuff.
So in an attempt to get a handle on our pantry, we're cleaning things out.
This morning's breakfast: strawberry preserve and coconut pancakes.
I used the basic pancake recipe from Joy of Cooking, but substituted agave nectar (half a bottle was found hidden in a random shelf with flours) for sugar, and added shredded coconut (that I bought too much of to make granola), strawberry preserves (made at home ages ago and also was hidden from view). Topped with maple syrup bought from the bulk bin at the coop.
Result: Amazingly deliciouso!
$$ - The new ingredients were the two eggs I added to the batter. I got half a dozen with my produce pickup at the farmers' market yesterday which came with a bucket load of greens, carrots, oranges, avocados, strawberries...all for $15!
