Since SQL Server 2008 has been released since August 2008, there are now a growing number of quality books available. I like both APress and Microsoft Press.

APress has their SQL Server 2008 Bookshelf that lists all of their available and upcoming books for SQL Server 2008.

Microsoft Press also has a list of published SQL Server 2008 books.
