Hey everyone we've made it to "174" recipies lets keep it going so that when we put books together they are filled with anything anyone could possibly want to eat!!!

To die for Hamburgers!

  • 1 lb hamburger
  • chopped onions (to taste)
  • 2 pieces bread ( toasted and crumbled)
  • salt/ pepper to taste
  • BBQ sauce any flavor, enough to hold meat together (we use sweet baby rays "hickory and brown sugar)

Mix well, Shape into patties and cook!

Note:

"You could try sauteing the onions first so they aren't crunchy"

Sauteed Pork & Pear Salad

8 ounces(s) pork, boneless top loin roast
1/2 teaspoon pepper, black
1/2 teaspoon sage, dried
cooking spray
1/4 cups(s) nuts, hazelnuts
1/2 cup(s) pineapple juice, unsweetened
1 tablespoon oil, olive
1 tablespoon honey
2 teaspoon mustard, Dijon-style
6 cup(s) lettuce, mixed greens
2 medium pear(s)

1. Trim fat from pork. Cut pork across the grain into thin, bite-size strips. Sprinkle with pepper and sage. Coat an unheated large nonstick skilled with nonstick cooking spray. Preheat over medium-high heat. Add pork. Cook and stir for 2 to 3 minutes or until meat is slightly pink in the center. Add nuts. Cook and stir for 30 seconds more. Remove meat mixture. Cover and keep warm.

2. For dress, in the same skillet combine pineapple juice, oil, honey, and Dijon-style mustard. Cook and stir just until bubbly, scraping up any crusty browned bits from bottom of the skillet.

3. Divide salad greens among 4 shallow bowls or dinner plates. Arrange pears on greens. Top with pork mixture. Drizzle with dressing. Serve immediately.

Emeril's Candy Bar-Stuffed Baked Apples

Servings:4
Difficulty: Moderate
Cook Time: 60-120 min

Ingredients

4 Medium apples (7 to 8 ounces each)
1/4 cup Skor candy bar, coarsely chopped
1/4 cup Snickers candy bar, coarsely chopped
2 tablespoons unsalted butter
1/4 cup Skor Candy bar, finely chopped
1/4 cup Snickers bar, finely chopped
3/4 cup apple cider
1 tablespoon granulated sugar

Directions

Position rack in center of oven and preheat the oven to 350 degrees F.

Place the apples on a cutting board. With a sharp knife, carefully cut the top 1/2-inch from each apple.

Using an apple corer or a small melon baller, scoop out the stem, core, and seeds from each apple, leaving the bottom intact.

Stand the apples in a 9-inch square baking dish, cut side up.

Divide the coarsely chopped candy bars among the apples, about 2 tablespoons of candy per apple.

Place 1 1/2 teaspoons of the butter inside each apple, on top of the candy bar pieces.

Again, divide the finely chopped candy bars among the apples, about 2 tablespoons of candy per apple, placing candy on top of the butter inside each apple.

In a small bowl. Whisk together the cider and sugar and pour the cider mixture over and around the apples.

Using oven mitts or pot holders, place the baking dish in the oven and bake the apples uncovered until tender, about 1 hour and 20 minutes.

Using oven mitts or pot holders, carefully remove the apples from the oven and let sit for 5 minutes.

Serve hot or warm, spooning the pan juices over the apples, and add vanilla ice cream if desired

Fresh Peach Cobbler

1/4 c. plus 2 tbsp. butter
2 c. sugar (divided)
3/4 c. all-purpose flour
2 tsp. baking powder
Dash of salt
3/4 c. milk
2 c. sliced peaches


Melt butter in 2 quart dish. Combine 1 cup sugar, flour, baking powder and salt. Add milk and stir until mixed. Pour batter over butter in baking dish BUT DO NOT STIR. Combine peaches and remaining 1 cup of sugar. Spoon over the batter. DO NOT STIR. Bake at 350 degrees for 1 hour.
If canned peaches are used, do not drain, use 1/2 cup sugar in peaches and 1/2 cup sugar in dough mixture.

Cafe Rio style dinner

Chicken:
  • 5 lb chicken breast, boneless, skinless
  • 1 small bottle zesty Italian dressing
  • 1 tbsp chili powder
  • 1 tbsp cumin
  • 3 garlic cloves, minced

Pork:

  • 3.5 lb pork roast
  • 8 oz bottle taco sauce
  • 1 tbsp cumin
  • 1 cup brown sugar
  • 1 can coke (not diet)

Another Pork:

  • 3 lb pork
  • 1 can coke
  • 2 cups brown sugar
  • 14 oz salsa (blended in blender)

Lime Rice:

  • 2 tbsp butter
  • 1 yellow onion, chopped
  • 4 cloves garlic, minced
  • 6 2/3 cup water
  • 8 tsp chicken bouillon
  • 1/2 bunch cilantro, chopped
  • 2 tsp cumin
  • 2 small cans diced green chilies
  • 1 tbsp lime juice
  • 1/2 tsp pepper
  • 3 cups rice (maybe 1/2 cup more, you'll have to decide)

Pico de Gallo:

  • 4 fresh tomatoes, chopped
  • 1 white onion, chopped
  • 1/4 bunch cilantro, chopped
  • 2 cloves garlic, minced
  • 1/2 tsp lime juice
  • 1 tsp salt
  • 1/2 tsp pepper

Tamatillo Dressing:

  • 1 pkg hidden valley buttermilk ranch dressing mix
  • 1 cup buttermilk
  • 1 cup mayo
  • 1-2 tamatillos
  • 1/2-1 clove garlic, minced
  • 1/2-1/3 bunch cilantro, chopped
  • 1/2 tsp lime juice
  • 1/2 - 1 small jalapeno, seed removed!!

Mix & Serve.

chicken: Mix all ingredients together in a large crock pot. Cook on high for 5 to 7 hours. remove chicken and shred. reserve a small amount of juice to pour over shredded chicken. Keep warm.

Pork: Cook pork in pot on low for 6 hours. (cover roast 1/2 water. Cook for a couple hours on high then switch to low for the remaining 4 hours makes it easier to shred.) also, when you add other ingredients, take out some water, leaving only about 1/2 inch in bottom of pot. Add ingredients to pork 3 hours before it is done.

Another pork recipe: Cook on high for 5 hours with just water and pork. Dump out water, add coke, salsa and sugar with pork (after shredding). Cook on High for another 3 hours keep Warm until ready to serve.

Lime rice: In a saucepan, saute butter, yellow onion & garlic. in a large pot, bring to boil the remaining ingredients.

Serve in the following order; Tortillas, Cheese, Shredded chicken or pork, Black or pinto beans, Lime rice, red and green leaf lettuce (shredded). (Lettuce can be places on top after rolling) Roll into burrito. Add Pico De Gallo, Guacamole, Fresh Cilantro, Fresh lime slice & Tomatillo dressing.

Green Salad with Strawberries

  • 1 pt. strawberries
  • 1/2 large red onion, diced fine
  • 1 head romaine lettuce (cut/tear into bite sized pieces and toss in large bowl)
  • 2 cups sugared almonds

Dressing:

  • 1/2 cup sugar
  • 2 TBSP poppy seeds
  • 2 TBSP vinegar
  • 1/4 to 3/4 cup mayo*(adjust mayo to taste)
  • 1/2 cup milk

dressing; mix well and pour on salad just before serving

sugared almonds; put slices almonds in frying pan over medium/high heat.

pour 1/4 cup sugar over almonds and stir constantly. Add more sugar as you like cook until lightly browned.

Cold Pasta Salad

  • 16 oz box bow tie or penne pasta
  • 1 cup mayonnaise
  • 1/4 cup sour cream
  • 3 large pickles (chopped)
  • 2 apples (chopped)
  • 1 medium onion (chopped)
  • 3 pieces boneless, skinless chicken (can be cooked in microwave, then cut into small pieces)
  • 3 hard boiled eggs (chopped)
  • 1 TBSP oregano
  • 1 TBSP parsley
  • salt & pepper

Cook pasta/drain and add above ingredients. Mix well. Chill in refrigerator for 2 hours before serving

Melt in your mouth Peanut Butter cookies

  • 1 cup butter
  • 2 cups brown sugar
  • 1 1/2 cups peanut butter
  • 2 eggs
  • 1 tsp vanilla
  • 2 1/2 cups flour
  • 1 tsp baking powder
  • 1 tsp baking soda

Mix. Roll into balls and bake at 375* for 10-12 minutes.

Lemon Dream Bars

Crust:

  • 1/3 cup butter
  • 1 cup sifted flour
  • 2 TBSP sugar

Topping:

  • 2 eggs
  • 3/4 cup coconut
  • 1/8 tsp baking powder
  • 1/2 cup brown sugar
  • 1/2 cup nuts
  • 1/2 tsp vanilla
  • 1/4 tsp salt

Frosting:

  • 1 cup powdered sugar
  • 1 TBSP cream cheese
  • 1 TBSP lemon juce (rind of lemon)

Cut together butter, flour and sugar. Press in a 9x9 inch pan. Bake at 350* for 10 to 12 minutes. Mix topping ingredeients and spread on partially baked dough. Bake at 350* for 20 minutes. frost immediately. Cool. Cut into squares.

Oreo Truffles

  • 1 pkg Oreos
  • 8 oz pkg cream cheese
  • 1 pkg chocolate almond bark (found by the Chocolate chips)

Grind Oreos in food processor until finely ground. soften cream cheese. mix oreos and cheese together. roll into balls, dip balls into melted almond bark. You can sprinkle with extra oreo crumbs or drizzle with white chocolate.

No Bake Cookies

  • 1/2 cup milk
  • 1/2 cup butter
  • 4 TBSP coca
  • 2 cups sugar
  • 3 cups oatmeal
  • 1 tsp vanilla

Boil butter, milk, sugar, coca & vanilla for 1 minute. stir well. add oatmeal and stir. Drop cookies onto wax lined tray. refrigerate. Nuts and coconut could be added.
