Dear Mother Nature,
How about a straight-up, plain and simple, nice day?
No more of this winter coat weather in the morning, umbrellas at lunchtime and short sleeve temperatures by dinner.
As one of those once famous boy bands used to sing..."quit playing games with my heart."
Whaddya say?
Sincerely,
Amanda

Potato Soup and Makin' Bacon
Need a quick, easy and delish dinner idea? Look no further! My friend Jessica made this for us for lunch the other day and Macy and I fell in love with it. And, since it appears that Mother Nature is still not quite ready to give us the warm spring weather we're dying for, soup is still on the menu at my house for now.
Potato Soup
5 large potatoes or 10 small ones cubed
6 cups of water
6 tsp chicken bullion
Onion to taste (Dried onions work fine)
1 cup sour cream mixed with a little bit of flour
Mix the bullion and onion in the water, and boil the potatoes until they are tender. Mash the potatoes (while still in the pot), add the sour cream and flour.
Easy, right? As you can see, my "a meal isn't a meal without meat decided to add bacon to his, along with some shredded cheese, (Ah, if only I had his metabolism. I keep praying that Macy and Coleman will.) but I think it's great plain.
Speaking of bacon, I found a super easy (and less messy) way to cook it. I'm probably the last person on earth to discover cooking bacon in the oven, but in case you haven't tried it...you should! No grease burns, no bacon smell that lingers in your house for days, and easy clean up.
All I did was line a cookie sheet with tin foil, then put the uncooked bacon on it. Put the cookie sheet in the over, then turn your oven on to 400 and cook for 18-20 minutes. Don't preheat your oven...apparently this chars the bacon or something.
Enjoy!
