Happy to help! All text in Boei is actually editable.
Please click edit next to the welcome message channel of your widget. Here you can edit the text you mentioned. We have included French already in the auto greeting (good morning, good afternoon, good evening – in French) depending on the time of the visitor. To change, please edit {{greeting}} to {{greeting:fr}} on the welcome message channel.

Sure, you can add Boei to your website without that. Boei is a widget itself, so it will be added with the plugin. Sidebars are not needed or relevant for Boei.
