Sugar, science, and a dash of sweet chaos

I started my apprenticeship at 15 and opened my first shop in Balmain in 2007. Since then, my creations have featured on MasterChef, in bestselling cookbooks, and on shows like Zumbo’s Just Desserts and Sugar Rush. Whether collaborating, teaching, or creating, I stay true to my passion for inspiring others through the art of patisserie and always evolving as the Sweet Assassin.

Layers, crunch, and a dash of dessert rebellion

Pull up the glass and peek into the cabinet: shiny entremets, cheeky tarts, snappy chocolate, flaky layers and a parade of macarons. It’s colourful, a bit mischievous and built to behave in the real world.

Some pieces are one‑offs; many can be tuned to your flavour, shape, palette or production limits.
