Fried Chicken

Ingredients:

3 chicken breasts cut in half, 1 c. milk, 1/2 tsp. salt, 1/2 tsp. pepper, 1/2 tblsp. onion powder, 1 c. cornstarch, 2 tblsp oil

DIRECTIONS:

Pour oil into frying pan and heat to med. low. Pour milk into a bowl. Mix remaining ingredients on a plate. Dip chicken in milk then in mixture. Place in frying pan. Top with a lid to a larger pan for even cooking. Turn chicken every 3 to 5 minutes to prevent burning, til chicken is cooked through. We like to dip our chicken in a honey mustard I make by mixing honey and mustard. (More mustard then honey for a tangy sauce)Enjoy!

Quick and easy Enchilladas

This is a delicious creamy chicken enchillada your family will LOVE!
RECIPE: 1 lg can chicken
1 1/2 cups cheese
1/2 cup salsa
1/3 cup sour cream
1 egg
1/4 tsp. onion salt
1/4 tsp salt
1/4 tsp pepper
4 oz. can green chillies
1/2 can diced olives
1 can cream of chicken soup
DIRECTIONS:
Mix all ingredients together. Fill the tortillas with mix and place in 9by13 pan. Top with can of enchillada sauce and cheese. Place in oven and bake @ 350 for 20 min. Top with sour cream and enjoy!

Manicotti and Pumpkin Muffins

Manicotti RECIPE:
1 box manicotti noodles
8 oz package cream cheese
1 c ricotta cheese
4 c mozzarella cheese
1 tsp onion salt
1 tsp garlic powder
parmesan cheese
1 c cooked and drained spinach

MARINARA SAUCE:
1 can hunts garlic and herb spaghetti sauce
1 tbls garlic
1 tbls brown sugar
1tsp oregano
1tsp parsley
Mix all ingredients together in a sauce pan and cook on med heat for 10 min or til bubbly.

DIRECTIONS:
Cook manicotti as directed on package. Drain water and rinse with cold water. In bowl mix cream cheese, ricotta cheese, 3 c mozzarella cheese, onion salt, garlic powder, and spinach. Stuff manicotti shells with mixture. (I gently tear open noodles and place mixture inside. Then I role them back up. No one will even notice and they will cook back together in the oven making it easier on you!) Place stuffed manicotti in a greased 9 by 13 pan. Spoon marinara sauce over manicotti. Top with remaining mozzarella cheese and cook at 350 for 15 min. Once cooked top with parmesan cheese and cook for 10 more minutes. Serve hot with garlic bread!

TIP: this is one of those recipes you need to plan ahead for since it calls for some things you wont always have on hand. We absolutely indulge in this recipe! Even my little Brax likes it.

PUMPKIN MUFFINS:

1 package of any cake mix (just powder dont make the mix)

1 tbls water

15 oz can pumpkin

1 cup choc. chips

DIRECTIONS:

Heat oven to 350. Mix all ingredients together til powder is all gone. Place in muffin cups, fill to the very top since they dont rise much, bake for 30 min. Enjoy this fluffy, moist and lowfat, yes they are low fat so have 2, muffin.

TIP: Our favorite cake mix to make this recipe with is the yellow cake. We have also used chocolate, spice and white, all of which turn out delicious! This recipe can be used as cookies as well. Just leave out the water, place on a cookie sheet and only cook for about 15 minutes.Image

Chicken Brocilli and Cheese Casserole

This is an easy throw together casserole when time is running out for dinner decisions. My mom made this growing up and we all loved it. Dennis and even Braxton like it as well.

INGREDIENTS:

3 cup frozen brocilli

1/2 c mayo

1 tbls lemon juice

2 small cans chicken

1/4 tsp curry

1/2 c cheese (any kind of cheese will work)

1/2 c bread crumbs

1 can cream of chicken soup

1-2 c uncooked rice

DIRECTIONS:

Cook rice as directed on package. Place brocilli in microave safe bowl and cover with water. Microwave for 3 minutes. In a bowl mix chicken, cream of chicken, curry, cheese, mayo and lemon juice. Drain brocilli and mix with other ingredients. Place cooked rice in bottom of a 9 by 13 pan. Top with mixture and sprinkle with bread crumbs. Bake for 40 min on 325 degrees.

TIP: I cook my rice 4 min less then directed on package to help moisture stay in while it bakes in the oven. Otherwise the rice gets a little crispy around the edges.

No bake Cookies

I know these cookies look like well... poop but they are probably my favorite cookie. Peanut butter and chocolate, cant go wrong there! They are a little tricky to make so dont get frustrated if they dont turn out just right the first few times you make them.
RECIPE:
2 c sugar
1/4 c cocoa
1/2 c milk
1/2 c butter
1 tbls. cornsyrup
1/4 c peanut butter
2-3 c rolled oats
DIRECTIONS:
Get out all ingredients before beginning. Put out piece of wax paper on flat surface. In large pan mix sugar and cocoa. Add milk. Heat stove to med high. Add butter and corn syrup. Bring to a boil. Boil for exactly 5 min stirring occasionally. Stir in peanut butter. Take off stove and quickly add oats. Start with 2 cups, if it doesnt look like its going to set up add 1 more cup oats. Place immediately on wax paper. Once cooled enjoy!

Stuffed french toast

RECIPE:

BATTER: 2 eggs

1 c milk

1/2 c sugar

1 tsp cinnamon

1 tsp vanilla extract

FILLING:

1 1/2 c cream cheese

1/4 c choc chips

1/2 c diced bannana

1/8 c orange juice

1/4 c sugar

1 tsp vanilla extract

DIRECTIONS:

Mix all BATTER ingredients. In seperate bowl mix all FILLING ingredients. Preheat oven to 350 degrees. Heat large skillet to med to med-low. Dredge bread in mixed BATTER and place in skillet. Cook until golden brown on both sides about 2 min. Remove from pan. Divide FILLING between 2 pieces of bread top with remaining 2 pieces of bread. Bake for 8 minutes.

COMMENTS: I think this recipe is plenty sweet without the chocolate chips but is sweet and delicious with them. I got this recipe from food network and made it for Dennis for Valentines breakfast. We both loved it!

Mexican salad

RECIPE:
1 lb hamburger
1 c uncooked rice
1 can diced tomatoes
1/2 can diced chilles
1/3 c ketchup
1 tsp brown sugar
TOPPING:
Chopped lettuce
Grated cheese
Crushed tortilla chips
DIRECTIONS:
Cook rice as directed on package. Place hamburger in skillet, cook til brown throughout. Add tomatoes, chilles, ketchup and brown sugar. Simmer for 10 minutes. Top rice with hamburger mix and other toppings. Enjoy!
We love this recipe on nights when we dont have much time to prepare dinner. I enjoy pairing it with corn or muffins.
