
Manicotti RECIPE:
1 box manicotti noodles
8 oz package cream cheese
1 c ricotta cheese
4 c mozzarella cheese
1 tsp onion salt
1 tsp garlic powder
parmesan cheese
1 c cooked and drained spinach
MARINARA SAUCE:
1 can hunts garlic and herb spaghetti sauce
1 tbls garlic
1 tbls brown sugar
1tsp oregano
1tsp parsley
Mix all ingredients together in a sauce pan and cook on med heat for 10 min or til bubbly.
DIRECTIONS:
Cook manicotti as directed on package. Drain water and rinse with cold water. In bowl mix cream cheese, ricotta cheese, 3 c mozzarella cheese, onion salt, garlic powder, and spinach. Stuff manicotti shells with mixture. (I gently tear open noodles and place mixture inside. Then I role them back up. No one will even notice and they will cook back together in the oven making it easier on you!) Place stuffed manicotti in a greased 9 by 13 pan. Spoon marinara sauce over manicotti. Top with remaining mozzarella cheese and cook at 350 for 15 min. Once cooked top with parmesan cheese and cook for 10 more minutes. Serve hot with garlic bread!
TIP: this is one of those recipes you need to plan ahead for since it calls for some things you wont always have on hand. We absolutely indulge in this recipe! Even my little Brax likes it.
PUMPKIN MUFFINS:
1 package of any cake mix (just powder dont make the mix)
1 tbls water
15 oz can pumpkin
1 cup choc. chips
DIRECTIONS:
Heat oven to 350. Mix all ingredients together til powder is all gone. Place in muffin cups, fill to the very top since they dont rise much, bake for 30 min. Enjoy this fluffy, moist and lowfat, yes they are low fat so have 2, muffin.
TIP: Our favorite cake mix to make this recipe with is the yellow cake. We have also used chocolate, spice and white, all of which turn out delicious! This recipe can be used as cookies as well. Just leave out the water, place on a cookie sheet and only cook for about 15 minutes.
