Bakin’ With Bacon and King Teddy

Greetings From The Castle Baconia Kitchen!

As you can see, I’m on my own today – whipping up a bacon dish that I hope you’ll like because – well – who doesn’t like BACON???!!!   Am I right?

I’ve got a great side dish for you today with one of mine and the Royal Mom’s favorite vegetables – butternut squash.    Add bacon and oh my – got to be yummy.    Mom says she can eat this – JUST THIS – as a meal because it’s so tasty and has lots of yummy ingredients for a well rounded meal.

Bacon Cheese Butternut Squash

 

Ingredients

  • 2 lb. butternut squash, peeled and chopped into ½ inch chunks
  • 4 raw bacon strips, chopped (I used pork)
  • 3 garlic cloves, minced
  • 1 tbsp olive oil
  • 1 tsp dried rosemary
  • Salt and pepper, to taste
  • ½ cup (2 oz) parmesan cheese freshly grated
  • ½ cup (1.5 oz) sharp cheddar cheese, shredded
  • ¼ cup parsley, chopped (not necessary – just looks nice!!)
Instructions
  1. Preheat the oven to 425 degrees F.
  2. In a large bowl, combine together the butternut squash, garlic, olive oil, rosemary, salt and pepper. Place into a 9×13 casserole dish and evenly top it with chopped bacon.
  3. Bake for 30-35 minutes, until the butternut squash is tender-crisp (fork goes through, but not completely tender).
  4. Sprinkle the parmesan and cheddar cheese evenly over the top of the butternut squash and bacon. Bake for an additional 10 minutes, until the cheese is completely melted, the butternut squash is tender, and bacon is crisped and cooked through.
  5. Garnish with parsley on top. Best served immediately.

 

Well I imagine your mouths are watering right about now – if you like squash they are anyway.   I highly recommend this one and so does the Royal Family.   Pretty good recommendation right?    Give it a whirl.  You’ll add it to your menu collection.

Friendly Friday Fill-Ins

1. My favorite kind of pie is _I love pie of all kinds BUT if I had to pick one it would be cherry.

2. I will celebrate St. Patrick’s Day by _not sure but I will definitely NOT ask for green eggs for breakfast.
3. I was correct when I predicted that it would snow today so I stayed inside and napped ALL DAY LONG!.
4. I didn’t see old age coming. (it snuck up on me!)
That’s it for another week and YES – Teddy’s right – we had 80 degree temps yesterday and SNOW TODAY but it melted before late afternoon and now the sun is back out.   I’m calling this “Schizophrenic Spring”.

Thankful and Poetic Thursday

Happy Thankful Thursday at Angel Brian’s Thankful Hop!     We love joining in on this Hop because we all should focus these days especially on things we are THANKFUL for.    I’m very thankful that we had a few days of beautiful weather that was like a “hint of Spring”……now we have not only possible high winds and snow for tomorrow but apparently there is a VERY VERY SLIM chance of extremely high wind/tornado activity “somewhere” in Virginia but probably not here (whatever that means!).     Anyway, we’re thankful Spring is TRYING to get here.    Also very thankful for all of you friends who visit MY blog every day of the week that we blog (all days except Tuesday and Wednesday).    You’re super friends and I love visiting you too!

As for the REST of our post today, we change venues to my Angel brother Sammy who does his Poetic Thursday blog post from his cloud in heaven every week.   He leads a poetry group at the Rainbow Bridge and on Thursday leads us all in some poetic fun too.   Join in – you might think you can’t write a poem but trust me – if I can – you can!  Tee Hee.

Hi Poetry Friends!   

Another Thursday rolls around and part of the post we do on Thursday comes from my Mom and Teddy at home and the other part (this part) is from ME at the Rainbow Bridge playing around with poetry.

Every week I find a photo for all of us to use as inspiration for a poem – we share our poems the following week so that means TODAY we share poems we wrote for the photo I gave you LAST Thursday.    Below is that photo and MY poem to go with it!

“Did I Say LARGE Salad?”

Food on menus sometimes says “LARGE” or “SMALL”

But it’s not as clear as when you say “SHORT or “TALL” !

I was hungry so I went with “LARGE”

The salad I got was the size of a barge!

Do I start in the middle and eat to the edge?

This salad has meat as well as lots of veg…..

I’ll need a TO GO box – there is NO doubt!

AND the restaurant door is small so how will I get the box and me OUT??????

 

 

Should have thought about all of the above before ordering right?    Well, it does look like a yummy salad with lots of goodies in it but it’s definitely enough for a GROUP.

SPARK on Monday

As most of you know, “SPARKS” was started by Annie McGuffy of McGuffy’s Reader but ended when she stopped blogging some time ago. It was meant to be a way to start out each week with a meaningful thought – something that spoke to each of us and hopefully everyone else who reads it. Although Annie isn’t currently blogging,  a lot of us who enjoyed her SPARKS decided to keep posting SPARKS of our own.    Feel free to join us even if this isn’t a Blog Hop – SPARKS are fun to find and share and think about and the more the merrier.  Just post a thought on Mondays – call it your SPARK – and perhaps your “followers will follow” !

My SPARK today comes after a lot of thinking I’ve been doing about aging.    I’ll be 79 this year – one step away from 80 – and while I have been through a lot in all those years I still believe FIRMLY that I’m here for a reason and I’ll go when God says it’s my time.    Like most of us at this age I’ve had my share of close calls, health scares, sad and trying circumstances and still – I’m here.    SO thinking about that prompted me to look for a SPARK that really spoke to me and I suspect might just speak to many of you…………

Well she would know, wouldn’t she.    But seriously, I think this is SO very true.   I hope my last 79 years have proven that I DID know how to find my own personal fountain………and I am still to this day sipping water from it.   Thankfully.

Sunday Selfie Hop

Happy Sunday!   Time for Selfies and because Mom didn’t have new batteries for her camera (yet) we have to resort to a FLASHBACK (again).   So I thought I’d look through Mom’s photo files and find a photo of me from about this same date in HISTORY!

HAHAHA……This was taken on March 7, 2017 which was about a month after I came to live here with my Mom and Dad.    I was having a wrestling match with my “tent” – I used to love that thing (which is now in shreds) and I’d run in one side and out the other and pushed it around and leaped on it and all that stuff kittens do when they’re acting crazy.   I looked right at Mom with her camera during a “rest period” before I began flying around the living room again –  so she snapped me!

WOW…..so that’s ME in my tent using Lunapic’s “NOUVEAU” art effect.      Gonna be a doozy of a puzzle right?
