I bought a box of Fiber One Cereal a few months ago. We totally can’t bring ourselves to eat it. So I have been wanting to find a recipe that I could use them in, so that they won’t go to waste. The back of the cereal box features Hungry Girl’s Grab and Go Breakfast Cookie. Some of her stuff looks really great…but I do not like them because she uses artificial sweeteners. That being said, I took her recipe and turned it into my own. Oh and mine has 20 calories less 🙂 
Mix and set aside:
3/4 cup whole wheat flour
1/2 cup all purpose flour
1 tsp. cinnamon
1/2 tsp. nutmeg
1/4 tsp. salt
Mix:
2 tbls. unsalted butter
1/4 cup canola oil
1/4 cup dark brown sugar
3 tbls. honey
Mix into sugar and oil mixture:
1 egg
1/4 cup pumpkin
1 tsp. vanilla
Now mix the flour mixture that was set aside into the batter.
Then mix in:
1/2 cup old-fashioned oats
1/2 cup Fiber One Cereal
1/3 cup dried cranberries
2 squares Ghirardelli 60% Cacao Bittersweet Baking Bar coarse chopped
Use a large cookie scoop or roll into a ball. Place on cookie sheet and pat out flat.
Bake at 350 for 12 minutes
138 calories per cookie

I wanted something sweet the other night so I thought I would try this recipe that I saw Paula Deen make. It was really easy and very yummy! Eat them warm with a scoop of ice cream.
Brown Sugar Chewies
Ingredients:
confectioners’ sugar for dusting
1/4 chopped pecans
1/2 teaspoon vanilla extract
1 teaspoon baking powder
3/4 cup all-purpose flour
1 beaten egg
1 cup packed light brown sugar
1/4 cup butter
Directions
Preheat oven to 350 degrees. Spray an 8-inch square pan with vegetable oil cooking spray.
In a small saucepan, melt the butter. Turn off the heat, add the brown sugar and stir until smooth. Stir in the egg. Stir together the flour and baking powder and stir into the brown sugar mixture. Add the vanilla and pecans. Pour the batter into the prepared pan and bake for 20 minutes. When cool, dust the top with a sifting of confectioners’ sugar.

So I decided to try to make some salsa with all the tomatoes I had from the garden. I have never made it before so I was apprehensive. I just kind of threw everything together and it worked out well. I think I will try to can some now that I know I can make it. Here is what I put in it:

Roma tomatoes diced
Black beans
Corn
Fresh Cilantro
Jalapenos
Red Peppers
Red Onion
Fresh lime juice
Salt
Sugar

heehee, No this message is not being brought to you by Ron Popeil and no I am not going to try to sell you anything!

Have you ever hear of Crock Pot Cake? Well I had not until recently. A friend at work brought this one day and it was a great treat. I thought I would share it with all of bloggy land!
It is really easy and yummy. A great treat for times that you don’t want to spend all day cooking. Well it might take all day but you don’t have to do anything. Just mix it all up and turn it on. It takes anywhere from 3 to 8 hours to cook.
1 chocolate fudge cake mix or your favorite chocolate
16 oz sour cream
1 c semisweet chocolate chips
1 c water
4 eggs
3/4 c vegetable oil
1(8oz) package of chocolate pudding mix
Mix everything together and pour into a crock pot sprayed with non stick cooking spray. Cook on low for 6-8 hours or 3-5 hours on high. Cook until cake is raised in the middle and edges are pulling away from pan.
“But wait, there’s more!” This tastes great topped with some ice cream too!

Works for Me Wednesday is backwards again today. That means that I get to ask a question and receive some answers from all of you!

I love to cook and bake but sometimes I struggle to find really good healthy recipes. Especially for desserts! There are only 2 of us but unfortunately I work full time so I don’t have as much time to cook as I would really like. I have to come up with a quick dinner so that I not cooking all night and eating really late. I would love if everyone would share with me their favorite recipes that are quick and healthy! Oh yeah and please with affordable ingredients! Thanks in advance!

Last night I came home and went right down stairs to check out the paint and take some pictures of it for everyone to see. We really wasted so much time hanging out down there because we still had to make dinner and go pick up a couple more cans of paint. I went upstairs to cook dinner and my plans were a little thrown off. My mother-in-law set out some chicken for us to use in the stir-fry I was going to make. It was all thawed out but still needed cut into strips. I hate messing with raw chicken so I decided to improvise. We are trying to eat healthy so throwing it in a pan with gravy on it was out of the question. Sadly I have not done any real grocery shopping so I had to rummage the cupboards. I wound up making up a dish that was delicious! We will be eating this one again. It was so quick and easy and it was really pretty. I wish I would have taken a picture of it because it was just so colorful!
Anyway here is what it was:
Place thawed chicken breast in baking dish covered in non stick spray.
Open a can of Rotel and spoon over chicken.
Open a can of black beans and spoon on top of that.
Cover with foil and bake for 30 minutes at 350 (or until chicken is cooked threw).
When finished top with a little shredded cheese (we used salsa jack).
Then drizzle some Hidden Valley Spicy Ranch (one of our new favorites) over the top.
We served this with some corn. I think it would be just as good with the corn baked on the chicken. Or what I would have really liked to do is make some sweet corn cakes…but we are trying to eat healthier stuff. Maybe a nice salad instead!

I just had to post this crazy cake that I made for Valentines Day. I found the recipe and thought it would be fun. Blake could not believe we were going to bake a cake in the microwave.
First you bake this in the Pampered Chef rice cooker. All you need is your favorite box of cake, the ingredients to make it, and some icing.
Just mix the cake right in the rice cooker. Then add any thing you would like to empty out of the pantry. I added chocolate chips, heath bits, and caramel ice-cream topping. Do not stir them in it just pour them in the middle. Then empty the can of icing in the middle too.
Next put the lid on it and place it in the microwave. It only takes 9 minutes to cook.

When it is done dump it upside down on a platter. The middle should be all oozy. It should be like a volcano cake. Just dish out a big scoop and make sure you get lots of the middle stuff. It is really not pretty but a great quick dessert. Eat it while it is warm. Top with ice cream or just eat with a big glass of cold milk.
