For the admin area, you can change the language you are using from WP-Admin > Settings > General and updating the site language.
For translating strings on the front-end, we have some guidance here:

For any specific strings that are not translated, we would recommend using the Loco Translate plugin:

I did that WP-Admin > Settings > General and have already changed the language to spanish, but there are some sections in the dashboard that doesn’t translate, look:

Before I did this migration I had all in spanish with no problem, without using any translation plugin.
How could this be fixed ?

I’m not able to duplicate the issue seen in your screenshot.
WooCommerce is not translated in Spanish (ie, it’s still WooCommerce.
Products is translated correctly as “Productos”.
The ‘Templates’ list item seen in your screenshot is not part of core WooCommerce.

In general, though, if there’s a translation available (meaning, it’s more than 80-90% translated) for a given plugin, then WordPress will automatically download it for the site language specified. So “Products” should be getting translated, at the least.
Have you added or updated any plugins? Changed themes? I wonder if you might be experiencing some sort of plugin conflict. Migrations, too, can definitely cause strange behaviors.

The theme and plugins are the same, the only change was the hosting migration.

Did you download the WooCommerce language pack for Spanish?
i.e.
1. Go to Dashboard → Updates.
2. Scroll down to the Translations section.
3. Click the Update Translations button.
