Dear Patrons,

I can’t leave you without a Thanksgiving update, so here it is. I’ve been missing doing another story-based update, but I’m still getting back into the groove after my forced hiatus. Everyone’s seen the full bird served, wings, drumsticks and all, but here’s an update featuring a piece that features the MAILLOT CUT as the roast. In the future, I might play around with a piece that’s more accurate in size with a real turkey for the occasion, that is the CRADLE CUT. Now, that’s an idea for the future, perhaps next year’s Thanksgiving or even for Christmas. You’ve seen some hints of this approach from the previous update.

Additionally, I’ve made a couple of additions to the Index page to the Nomenclatures of Butchery section called the Corselette Cut and the Culotte Cut.

Otherwise, I’ll keep this short. You have your time with the family and I’ll see you at the other side of this holiday.

Behold the Maillot Cut, oiled, stuffed and ready for the oven. One could stuff from the belly cavity before it is sewn, but wouldn’t it be more fun to stuff the bird through another orifice?
