02 HOME TOUR Step inside Matty J and Laura Byrne’s maximinimalist mid-century beach house Mer Chante
SITCHU MAGAZINE Matty J and Laura Byrne may have charmed the nation on The Bachelor back in 2017, but these days, the couple are better known for their life off-screen — from their podcast and businesses to raising their adorable young family. Their latest project? A positively playful renovation of this Mollymook beach house. Like many great things, Chante Mer was the product of serendipity. Or, in Matty’s words, “I decided that after a couple of glasses of wine was the perfect time to browse realestate.com.au before bed.” He continues, “That’s when we stumbled across Chante Mer. The listing had only been live for a few hours. It was gloriously run down—equal parts beach house and weathered old shack—but there was something about it we couldn’t shake. It had incredible bones, ocean views and just enough charm to make us wildly underestimate how much work (and money) lay ahead.” After being the first through the door at the open home, it wasn’t long before “imagine if someone restored this place,” quickly shifted to Matty and Laura having “mentally claimed bedrooms, planned the renovation and spent a budget that didn’t technically exist yet.” While plans quickly snowballed from “small cosmetic updates” to a full-scale renovation, one key structural factor set them up for success. The couple shares, “The best thing about Chante Mer is that the original design completely understood the hero of the home wasn’t the house— it was the view.” Sharing more on the home’s personal history, Matty explains, “The previous owner, Valerie, called the home Chante Mer, which translates from French as ‘Sing the Sea’. Given the uninterrupted ocean views and the soundtrack of waves rolling in all day, we never even considered changing it. 04 HOME TOUR Despite having to replace windows, kitchens, bathrooms, flooring and timber framing that had been destroyed by white ants, a major goal of the renovation was to retain the home’s undeniable character. “As we learnt more about Valerie, we felt an even greater responsibility to honour what she’d created. She worked as a translator for the United Nations and spent decades writing from the house, so there was already so much history woven into its walls,” Laura adds. “Throughout the renovation, our goal was never to erase that history—it was to preserve the character and charm that made the home so special, while giving it another chapter for our family.” While preserving the history of the home was important, Matt and Laura still wanted to add their stamp, weaving in thoughtful details throughout. Zeroing in on the fireplace, the pair went above and beyond to ensure it was a feature of the natural heart of the home.” We worked with Smink Studios to create a custom handmade tile design that was playful, colourful and completely unique to Chante Mer. It’s one of those features that makes people stop the moment they walk in, and we love that it doubles as a piece of art.” Throughout the design process, the couple were conscious not to let their decision to have Chante Mer as a holiday house dictate their design choices. “We still wanted it to feel like a home first and foremost—not a holiday rental designed to appeal to everyone,” they explain. “What it did give us was permission to be a little braver. We embraced colour, playful tiles, bold patterns and design details that we might have been too nervous to use in our family home,” Laura explains. “We wanted Chante Mer to have a real sense of personality so that walking through the front door immediately felt like you were somewhere unique.” As for learnings, the pair insists remote renovation isn’t quite as glamorous as it looks from the outside. “We had every intention of waiting until our next scheduled visit, then Tom (our builder) would call with a question that needed an answer in person, a delivery would arrive, or we’d have to choose between two options that somehow looked completely different in real life than they did over FaceTime. We aimed to get down to the house at least every two weeks, but when deadlines got tight or delivery issues popped up, we found ourselves doing the 7-hour round trip twice a week at times.” “If you asked me whether I’d renovate it again... I’d probably need a long lie down before answering,” laughs Matty. “But would we change any of the design decisions? Not a chance. He’s known for produce-driven, fire-fuelled food that makes good food feel anything but fussy. Your career to date has been so colourful, what have been a few highlights? I’ve been incredibly lucky to work alongside some amazing people throughout my career. Winning the San Pellegrino Young Chef award for Southeast Asia and placing second in the world was a huge moment, but my time at Burnt Ends probably shaped me more than anything. Watching it earn its first Michelin star and climb the World’s 50 Best rankings taught me what it takes to build something special. Opening arkhé has been my most rewarding chapter. To build a restaurant around fire, something people initially thought was a crazy idea, and then see it become one of Australia’s leading steak restaurants has been incredibly satisfying. Cooking entirely without gas or electricity is bold. What’s the hardest thing you had to unlearn to cook that way? Giving up control. With gas or induction you can dial in an exact temperature at the turn of a knob. Fire doesn’t work like that. Every service is different, every piece of wood burns differently, and every ember behaves differently. You stop trying to control the fire and instead learn to read it. Once you understand that, it becomes one of the most rewarding ways to cook. What’s one technique or ingredient you’re loving right now that home cooks could experiment with? Cooking over charcoal. It doesn’t have to be anything fancy, just a small barbecue or hibachi. People often think fire is about making food taste smoky, but it’s actually about building flavour through caramelisation and heat. If I had to pick one ingredient, it’d be Australian olive oil. A really good extra virgin olive oil can completely transform a finished dish. What dish instantly transports you back to your childhood on the NSW Central Coast? Fresh prawns straight off the trawlers. Growing up on the Central Coast, seafood was everywhere. I still remember sitting around with family peeling prawns and eating them with nothing more than fresh bread, butter and lemon. SITCHU MAGAZINE Counter Cut Steak with Café de arkhé Butter, Fries & Butter Lettuce Salad Serves 2 Ingredients Method Steak 600g beef steak (rump cap, hanger, sirloin or your favourite grilling cut) Freshly cracked black pepper Olive oil Sea salt Café de arkhé Butter 250g unsalted butter, softened 20g shallot, finely diced 5g garlic, minced 8g anchovy fillets 10g capers, finely chopped 10g Dijon mustard 5g Worcestershire sauce 2½g curry powder 1½g smoked paprika 15g flat-leaf parsley, finely chopped 5g tarragon, finely chopped 5g chives, finely sliced 10ml lemon juice Salt and cracked black pepper Salad 1 butter lettuce 4–5 breakfast radishes, thinly sliced 1 small shallot, finely sliced Sherry Dressing 30ml sherry vinegar 90ml extra virgin olive oil 1 tsp Dijon mustard Sea salt Black pepper Fries Frozen or homemade fries Flaky sea salt Café de arkhé Butter Sweat the shallots gently in a little butter until soft without colouring. Add the garlic and anchovies and cook for another minute until the anchovies dissolve. Allow to cool completely. Beat the softened butter until smooth, then mix through the cooled shallot mixture, capers, Dijon, Worcestershire, curry powder, smoked paprika and lemon juice. Fold through the parsley, tarragon and chives. Season to taste before rolling into a log with baking paper and refrigerating until firm. Salad Whisk together the sherry vinegar, Dijon and olive oil. Season with salt and pepper. Just before serving, dress the butter lettuce, radish and shallot lightly. Steak Light your Gozney or hibachi and allow the charcoal to burn until it’s covered with a light layer of ash. Season the steak generously with salt and pepper and lightly coat with oil. Cook over the hottest part of the grill, turning every minute or so to build an even crust. Rest for at least 8–10 minutes before slicing. Top immediately with a thick slice of Café de arkhé butter and allow it to melt over the warm steak.
