How is Artesana’s Milk?

Pasteurized at mild temperature

Have you ever wondered what pasteurized milk means and what the difference is between it and unpasteurized milk, that is, raw milk? Well, before it can be sold in stores and consumed safely, raw milk must go through a process called pasteurization, which consists of heating it to certain temperatures. Through this process, all pathogens that can make you sick are eliminated. Depending on the temperature at which pasteurization is carried out, the disadvantage of this process is that it can affect the nutritional qualities of the milk.

To preserve the natural properties of milk, at Artesana we have opted for low temperature pasteurization, using the latest technologies, those that guarantee minimal intervention on the milk. The result? An optimal milk for consumption, which has preserved all its vitamins, proteins and fatty acids.

Whole

Artesana milk is whole milk, which means that it is exactly as it comes from the farms, with a naturally variable fat content between 3.5% and 4.2%. This depends on each batch of milk, but also on the seasons. In the warm season, the milk is less fatty, while in the cold season it is more fatty. The animals’ feed makes the difference. The milk is never standardized, which means that it is not brought back to a uniform and standard fat content. Artesana works separately with each batch of milk from each farm.

Non-homogenized

Artesana does not intervene in milk, that is, it does not homogenize it. The fat globules remain intact, they are not broken into small particles, so they do not disperse throughout the mass of milk, which ensures optimal absorption by our body. In addition, non-homogenized milk always has variations in taste, depending on the season. This is why the taste of Artesana dairy products is never the same.

Milk has the taste of the seasons because nature knows how to do magic best, enriching the pastures with new plants every season. Artesana loves it and values ​​it. It knows it and lets it be a continuous source of inspiration. It is never the same, Artesana is never the same.

With cream

At Artesana, milk really has cream. What is milk cream? It is that thick layer or cap that forms when the fat rises to the surface of the milk, proof that Artesana milk is really whole, not standardized, not homogenized.

Take any bottle of milk and turn it upside down with the cap down. You will see that it does not flow, precisely because of the thick cream. This is not a trick; it is simply proof that everything we have said above is true.
