[docs] Upgrade flink docker image version to latest Flink 2.2 for quickstarts

Description

Currently, the quickstart demos use Flink 1.20 as the base image version. However, many new features—such as Delta Join—are only available in newer versions like Flink 2.2. Upgrading the base image to Flink 2.2 would allow users to reuse the existing Docker Compose environment to easily try out these advanced features.

Hi @Madhurchandran, I noticed that upgrading to Flink 2.2 as the default engine may present some challenges because the Faker connector does not yet support Flink 2.x. If this becomes a blocker, we can postpone this issue until the Faker connector adds Flink 2.x compatibility.

hi @wuchong, Thanks for the update. I noticed knaufk/flink-faker#127 has passed checks and is pending merge. Once a Flink 2.x compatible release is available, I can proceed with upgrading the quickstart Docker image to Flink 2.2 and validate the examples.
