Japan Kappodo Institute(JKI)

Japan Kappodo Institute is dedicated to sharing the three essential pillars of Kappo cuisine with the world: the essence of Japanese cuisine, the techniques of Kappo cooking, and the philosophy and mindset of the Kappo chef.

Through the promotion of Kappo cuisine—a uniquely Japanese culinary tradition in which dishes are prepared and served directly before guests across the counter—and through the education and development of Kappo practitioners, we strive to contribute to the happiness, well-being, and healthy lives of all those connected to the world of Kappo.

The Association carries out its activities with DKB serving as its principal dojo and center of learning. Our association operates with DKB as its main dojo.

Cultivating “Kappo People”

We provide learning opportunities for those who appreciate counter-style Japanese cuisine, where chefs and guests share food face-to-face across the counter.
“Kappo People” refers not only to chefs, but also to those who deeply value and enjoy kappo culture.

Anyone may become a member by passing the Kappodo-related computer examination and paying the admission and annual membership fees.
