Two of our favorites:

Toffee Chip Bars

2 sleeves Ritz crackers, finely crushed
1 can sweetened condensed milk
1 8 oz. package Skor toffee chips or Heath milk chocolate toffee bits (reserve 1/2 cup for topping)

Mix together, spread in 8x8 greased pan. Sprinkle remaining toffee bits and pat down. Bake at 325 degrees for 30 minutes. Can make anywhere from 16 - 50 bars, depending on size. They're very rich, so a bite or two can be enough!

Double Dutch Brownie Cookies

1 "family size" package brownie mix
3/4 cup unsifted flour
6 tablespoons cooking oil
2 eggs
2 tablespoons water

Mix well and refrigerate for four hours. Roll into small balls (about a rounded teaspoon), then dip in powdered sugar. Bake at 350 degrees for 11 - 13 minutes. Do not overbake. Makes 5 dozen. Store in airtight containers while still warm.

In the privacy of our home (and now my LJ) we call these two treats "Shit Surprise" and "Dirty Snowballs," respectively, because of their appearance, but trust me, they taste YUMMY.

Those toffee bars sound surprisingly yummy.

Someone I used to know used to make a Christmas cookie that involved, I believe, Ritz crackers with peanut butter spread between them, and then each little sandwich dipped in melted white chocolate. She called them "white trash snowflakes," but they were awesome -- they tasted like butterfinger candy bars, only better.

I know they look like roadkill, but they really do taste good!

I've seen those white trash snowflakes, but you can even make them with Nabs -- one less step in the process! Just pick up any commercial peanut-butter crackers and go to town! And then add sprinkles, of course.

The dirty snowballs? They're about the only dessert my non-sweet-toothed husband can't resist. Every time I walk by the tupperware, there are a couple more missing! I think we're going to have to make another batch over the weekend!

I just made my fourth batch this morning -- they seem to disappear quickly!

Definitely these are on the list to make. I'll be baking in January -- too much to do right at the moment for Christmas!

Thank you! And the same to you! I just went and read about Torquere Press -- that's very cool.

Hi! Two things:

1) One or more of your stories are being rec'ced as 'Essential Dex fics' in this post in my LJ (http://sgatlantislight.livejournal.com/82214.html). If you'd like to double-check that the links go to the particular archive you prefer and that the warnings are correct, I'd appreciate it!

2) Have you ever tried boxed cake mix cookies (http://sgatlantislight.livejournal.com/83380.html)? Quick, easy, and with infinite variants.

Thanks for the rec! The link looks good, and the pairing is correct. :)

I'll check out the cookie recipe -- thanks!

My family has this cookie recipe that's well loved, but calls for two tablespoons of sweetened condensed milk. My big question has always been what the hell to do with the remaining bulk of the can. The toffee chip recipe is PERFECT, it ends up, if I just take out a few crackers. In addition, my dad loves 'em to bits.

Thank you so much for sharing these.

Yes, that should work out just fine! In fact, the original recipe called for 2.5 sleeves of Ritz crackers, but that disrupted my sense of equilibrium -- four sleeves makes two batches nicely! -- so you should be able to cut back on the sw. condensed milk without losing anything!
