Two of our favorites:
Toffee Chip Bars
2 sleeves Ritz crackers, finely crushed
1 can sweetened condensed milk
1 8 oz. package Skor toffee chips or Heath milk chocolate toffee bits (reserve 1/2 cup for topping)
Mix together, spread in 8x8 greased pan. Sprinkle remaining toffee bits and pat down. Bake at 325 degrees for 30 minutes. Can make anywhere from 16 - 50 bars, depending on size. They're very rich, so a bite or two can be enough!
Double Dutch Brownie Cookies
1 "family size" package brownie mix
3/4 cup unsifted flour
6 tablespoons cooking oil
2 eggs
2 tablespoons water
Mix well and refrigerate for four hours. Roll into small balls (about a rounded teaspoon), then dip in powdered sugar. Bake at 350 degrees for 11 - 13 minutes. Do not overbake. Makes 5 dozen. Store in airtight containers while still warm.
In the privacy of our home (and now my LJ) we call these two treats "Shit Surprise" and "Dirty Snowballs," respectively, because of their appearance, but trust me, they taste YUMMY.

Date: 2006-12-19 08:45 pm (UTC)Someone I used to know used to make a Christmas cookie that involved, I believe, Ritz crackers with peanut butter spread between them, and then each little sandwich dipped in melted white chocolate. She called them "white trash snowflakes," but they were awesome -- they tasted like butterfinger candy bars, only better.

Date: 2006-12-19 11:03 pm (UTC)I've seen those white trash snowflakes, but you can even make them with Nabs -- one less step in the process! Just pick up any commercial peanut-butter crackers and go to town! And then add sprinkles, of course.
