On iPhone and iPad I can delete Facebook (and thus all its data, per storage info in Settings) and reinstall it and it still remembers my login. Privacy violation/bug?

I blame poorly documented features of Keychain Storage: Apps on iOS can utilize a secure storage mechanism called the Keychain to store sensitive information like login credentials and tokens. This data is encrypted and tied to your device or iCloud account, providing a layer of security. This data can be accessed and deleted either with the keychain app on an older version of macOS or in the password app on new version of all Apple. OSes.
