Orange You Glad its Sunday?

Cranberry Orange Walnut Waffles

1 1/2 cups all-purpose flour
5 teaspoons sugar
4 teaspoons baking powder
1/2 teaspoon salt
2 large eggs, separated
1 cup evaporated milk
1/2 cup orange juice
2 Tablespoons vegetable oil
Zested orange peel of 1 orange
1/2 teaspoon vanilla
1/3 cup dried cranberries
3 Tablespoons chopped walnuts
Directions
Whisk the flour, sugar, baking powder, and salt together in a large bowl.
In another bowl, mix together the egg yolks, milk, juice, oil, orange zest and vanilla.
Mix the egg whites on high in a stand mixer until stiff peaks form.
Add the liquid mixture into the dry ingredients until well combined. Fold the egg white into the mix, then add the walnuts and cranberries.
Follow the directions on your waffle iron (I have a Belgian waffle iron, so I use 3/4 cup of mix and cook for 6 minutes - this recipe made 4 waffles).
