[Recipe] Something like tava

Serves 2
Preheat oven to 200°C.
Slosh some olive oil into a pot with a lid, that can go on the hob and in the oven; put it on the hob over medium heat.
Slice two small or one big onion and add to pot.
Chop a medium aubergine into small bits (5mm cubes?); add to pot; stir.
Smash/chop some garlic (>4 cloves); add to pot; stir.
Roughly chop two bell peppers; add to pot; stir.
Chop 200g plain, firm tofu into roughly 5mm cubes; add to pot; stir.
Add some new potatoes (250g?) to pot; stir.
Add a tin/carton of chopped tomatoes, a couple of teaspoons of paprika and a couple of teaspoons of fajita spice mix; stir.
Add a tomato-tinful of water.
Bring it to the boil, put the lid on and put it in the oven for 50 min.
(If you eat dairy) Grate 50g cheddar or similar. After the 50 min, take the lid off the pot, sprinkle the cheese over and return it to the oven, uncovered, for ten minutes.
