resolveEnvironment returns `undefined` when it should not

The link to pipeline doesn't work. This issue is also about a different interpreter than what was previously failing: /Users/donjayamanne/crap/.venvWidgets/bin/python.

Python logs in microsoft/vscode-jupyter#12059 repeatedly says /Users/donjayamanne/crap/.venvWidgets/bin/python doesn't exist. Are you sure it's the right interpreter you're after and can you make sure it exists before attempting to resolve it?

I checked a passing build and the active interpreter it is using is different: /opt/hostedtoolcache/Python/3.10.8/x64/bin/python

/Users/donjayamanne/crap/.venvWidgets/bin/python is likely a residue from some other test run which no longer exists, resetting the interpreter after these tests should fix the issue.

Don confirmed this was an issue on the Jupyter side and has fixed it over there.
