Japan Kappodo Institute
Today, Japanese Kappo cuisine has transitioned national borders and become a universal language appreciated by culinary enthusiasts around the world. Yet beneath its elegance lies something far deeper: a profound respect for nature and the refined spirit of true craftsmanship.
Japan Kappodo Institute has systematized this cultural heritage not merely as a collection of techniques or culinary styles, but as a lifelong path of discipline and personal cultivation—Kappodo, the Way of Kappo.
Through this philosophy, we seek to share the authentic value of Japanese cuisine with the world and preserve it for future generations.
What Is Kappo?
The word “Kappo” originates from two fundamental culinary actions: “katsu” (to cut ingredients with a knife) and “hō” (to cook through simmering, grilling, or other applications of heat).
Kappo is a uniquely Japanese dining style in which chefs prepare seasonal ingredients directly before their guests at a counter, creating a highly personal and immersive culinary experience.
Today, the Kappo style has gained international recognition, and many of Japan’s most sought-after restaurants—where reservations are notoriously difficult to obtain—embrace this tradition, captivating food lovers from around the world.
What Is Kappodo?
The Association focuses specifically on the study and practice of Kappo, one of Japan’s most distinguished culinary traditions.
Kappo is not simply about mastering cooking techniques.
It is a path built upon gratitude toward nature, respect for ingredients, consideration for those who dine, and elegance in one’s conduct and behavior.
Through the practice of cuisine, one cultivates discipline, refines character, and deepens one’s humanity.
For this reason, we regard Kappo not as a destination, but as an endless journey of personal growth and refinement.
The Vision of Kappodo
Our mission is simple:
To bring health, happiness, and human connection to people around the world through the power of Kappo.
Kappo is far more than a dining experience. It serves as a bridge that connects hearts.
For the chef, happiness comes from working sincerely with seasonal ingredients and witnessing the joy of those they serve.
For the guest, happiness is found in receiving the chef’s dedication, appreciating the experience through all five senses, and sharing gratitude through the act of dining.
This cycle of fulfillment between the creator and the recipient embodies the very essence of Kappo and forms the spiritual foundation of Kappodo.
We believe that as this philosophy spreads across cultures and generations, it will inspire a broader sense of well-being and human connection through food.
Our Commitment
Through the culture of Kappo and the philosophy of Kappodo, Japan Kappodo Institute is dedicated to passing on the importance of food, the cultivation of character, the joy of creating, and the pleasure of receiving to future generations.
We do not view Kappo merely as a method of cooking.
Rather, we see it as a culture in which chefs and guests resonate with one another through a shared experience.
It is our mission to preserve, promote, and communicate the true value of this remarkable tradition both within Japan and throughout the world.
